La Table des Climats — Restaurant in Dijon

Classy place, excellent service, original dishes beautifully presented, with really great wine pairings recommended by the sommelier. We were offered wonderful little nibbles from the kitchen, trout and a duo of carrots (pureed and pickled) on a little hazelnutty disk. Our starter was an excellent salmon gravlax with red beets, navets and radishes. I should not forget the absolutely fantastic bread, from old style flour, fluffy and delicious. Our main was rumpsteak with matchstick fried potatoes, an excellent mashed potato dish with hazelnut flowers, fried (if I got that right). Artichokes in three variations, raw, steamed and fried/grilled. Finishing off with a sumptuous Valrhona chocolate dish: Ice cream, 'brownie-style cookie', hot chocolate sauce....fantastic! At the beginning we opted for the house cocktail. A true find: On a hot day, a sparkling crémant with pureed cassis and a touch of the locally famous gingerbread flavour is just the best thing you can imagine. So well balanced. This place is new, hence no photos on their website, but the atmosphere is cozy and stylish, perfect for an evening among friends (as in our case) or for a romantic dinner. Everybody made such an effort, and with a truly perfect result. We were very satisfied and happy and do recommend it highly! Two designers in our group liked and approved the decor. This was a very well crafted meal. The wait staff was excellent (albeit a slight language barrier which resulted in us not always getting a full description of the complex and delicious dishes we were served). The food was inventive, delicious, and beautifully presented. The place was almost completely empty which is always a weird feeling. And the setting in the new gastronomy center was a litttle desolate and quite different from the rest of Dijon. All that said we agreed it was one of the best meals we’ve had in our 3-week...

J'ai reçu la recommandation du Guide Michelin d'aller dîner à La Table Des Climats. J'y suis allé le 31 décembre simplement parce que j'achetais des provisions pour ma propre cave à vin. À mon arrivée, j'ai été accueilli et conduit à une petite table dans un coin. À mon avis, ce n'était pas une table habituelle et normalement, elle serait utilisée comme table d'appoint pour le personnel. Ce n'est qu'au bout d'une demi-heure que j'ai dû demander la carte des vins, n'ayant toujours rien à boire.

Le serveur qui m'a installé à table était sympathique, mais le reste du personnel ne m'a pas demandé une seule fois comment était le repas lors du débarrassage des plats. Les plats étaient enlevés sans un mot. Les couverts étaient posés négligemment, sans soin. Les serveurs semblaient plus occupés avec les autres tables et personne ne m'a demandé entre-temps si je voulais encore un verre ou une bouteille de vin. Au début, j'avais pris un verre de vin à 25 euros; s'ils m'avaient demandé plus souvent, j'aurais volontiers pris un autre verre. On ne s'est pas du tout occupé de moi.

Dans l'ensemble, la nourriture était bonne, sauf pour le dernier plat qui était tout simplement froid. On ne m'a même pas demandé lors du débarrassage comment c'était, et j'avais même laissé la moitié de l'assiette. Je ne recommanderais certainement pas ce restaurant et je rédigerai également un avis dans le Guide Michelin en déconseillant ce restaurant pour les personnes...
