Beautiful, but gimmicky and rude with underwhelming drinks. I came here for a friend's birthday and was left with a bad taste in my mouth by the experience in more than one way. The black light menu was gimmicky, the downstairs was very loud, and none of the drinks were appetizing at all. The server scolded us TWICE, once when we were taking time to order and again when one of our friends declined to drink. There were no non-alcoholic options and all the drinks were sickly sweet and came pre-mixed out of a bottle. We may have had a better experience at the upstairs bar where the drinks were actually made by a bartender, but it seemed that the dungeon-like bottom floor had been reserved to do quick table turnovers for tourists. Nothing against them - even tourists deserve a better service experience. The bottled drinks were €14, uninteresting, and so sweet I literally grimaced with every sip. Shortly later our server told us she "couldn't keep saying no" to people who wanted our table and gave us fifteen minutes to get out despite having a €90 tab open. Not that I didn't want to leave, but it was embarrassing and tainted our friend's birthday celebration. We came early specifically to get a table and were hustled out in a way I've never experienced - I felt like a teenager caught stealing at the gas station. I feel crazy reading all these five-star reviews - I'm glad other people had a better experience! We had the pleasure of meeting co-owner Kenney, who made us feel incredibly welcome and even celebrated the occasion with us via a special birthday drink. The cocktails here are wildly creative — I still can’t wrap my head around how they dream them up. We’ve visited twice now: the first time in June 2024, when we sat in the downstairs lounge w/ UV-oriented drink menus (a very cool and unique experience), and again in April 2025 when the downstairs area was under renovation. Even then, the drinks and hospitality were just as impressive.
If I had one note — and I wish I had mentioned it to Kenney — it’s this: if you’re tall like me (I’m 6'2"), mind your head on the stone staircase leading back up from the downstairs lounge! I bumped mine and felt it for a few days. Still, a small price to pay for such an incredible experience. Bar Nouveau is a must-visit in Paris, and we’re already looking forward to coming back....

The space is extremely small—just about 8 to 10 seats at the bar and hardly any room to stand—which makes the whole experience feel personal and intimate. You really get a sense of direct connection with the bartender, which is part of the charm.
They have a small menu with their own signature cocktails, which are creative and well thought out. But they’re also happy to go off-menu and make classic cocktails, and those were just as well executed. The drinks come in smaller portions, which I actually really appreciated, and the prices reflect that—fair and reasonable for the quality you’re getting.
It’s definitely a place I’d recommend. If you want to avoid waiting, it’s a good idea to come earlier in the day. They open quite early, and getting there early means you can settle in comfortably without the stress of trying to squeeze into a tiny space.
