What an amazing experience! Truly worthy of a 2024 Michelin rating. It is a fixed menu with no menu. The chef surprises you with every course which truly enhances the experience. There were so many unique flavors in the 5 course menu I can’t even fully describe. The “menu” only had a list of their over one dozen suppliers so that should give you an idea of the vast array of ingredients.
We were seated in their lovely courtyard.
One course was veal sweetbreads. It was tender and delicious with some crispiness on the edges. I found out later this was pancreas but have no fear.
The crab entree was amazing. Not sure if it was proper, but I couldn’t resist using bread to wipe and finish the precious sauces of each course. Some entrees had a rich smoky flavor, including the Tom Dory fish dish.
Another example was a dip of shaved chocolate for dessert. It was amazing. Turns out it was ground and roasted cocoa bean husks. Wow, who woulda thunk that was a thing?
The service was awesome and the staff was cheerful, polite and patient with our many questions. They were apologetic of their English skills but I will say their English was way better than my French abilities. :-)
