And though the popular press claims that "La Colombiers" serves the best cassoulet in town, we were reluctant to walk that far (again, the heat!) We found that La Cave Au Cassoulet was closer, had a higher Google rating, and being in a "cave"--a brick Toulousain basement--cool. And we loved it!! The setting was charming, the service was prompt, friendly and cheerfully Gascon, and the cassoulet was everything we hoped: a meaty duck leg, chunks of delicious Toulousain sausage, beans that were perfectly cooked and plenty of delicious sauce. And, even with fois gras for starters, a lovely Madiran to drink and pruneaux armagnac at the end, it was reasonably priced! For a proper regional meal, I recommend La Cave Au Cassoulet highly. The cassoulet was delicious and huge!! The both of us could have shared this. We saw from other tables that two person usually just order one dish of cassoulet and share amongst them.
The 3 course meal we had was the foie gras( very good but not going to eat it anymore because it's unethical), duck leg (cooked to medium and this is SO TASTY) and a pear-ice cream dessert ( I thought it was okay but my bf thought it was delicious)
