As a single guest you always hope for a special place in the restaurant and that you don't have to wait too long for the different courses. This was excellently arranged for both in this restaurant, I got a kind of chef's table spot and all the staff visibly enjoyed making my evening unforgettable. The chef was very informative about the dishes, and the sommelier showed enthusiasm when she explained and substantiated her wine pairing. The guts and creativity she showed by, for example, serving a beautiful Sake with the dessert was an example of this. The 8 courses were therefore all almost perfect.. Only the chef could show a little more guts by, for example, not opting for the safe and oh-so well-known filet mignon but opt for sweetbreads or even andouiette, in any case something less safe. However, there are certain details that are inexcusable for a 90€+ restaurant, let me explain:
We were sitting right in front of the bar counter (where they add the final notes to the food coming out of the kitchen )The high chairs were rather uncomfortable, especially for a 3 hour dinner.
The view on the food preparation is far from being a show worth watching. On the contrary, seeing dishes being prepared for other tables somewhat spoils the surprise element of any refined meal.
It took really too long to complete the 8 course menu. Long waiting times in between dishes made our hunger diminish to a point where, in the end, we were no longer hungry with 2 courses still "to-go".

Just one suggestion for the owner: I do not understand why this restaurant has a different name in every platform. On maps it is called “the cannery”, on their website is called “la conserverie”, on TripAdvisor is called “conserverie des deux cavistes”.
