I travelled all the way from England to Troyes, taking the necessary quarantines and vaccinations to spend some time sampling the famous foods of the region. If one is eating well in this area then the local delicacy which cannot be missed is the classic andouillette. I had been recommended this restaurant as somewhere that the veritable 'AAAAA' andouillette produced by the acclaimed Gilbert Lemelle could be sampled. So I ordered the whole 210g andouillette, with the famous Chaource topping. This was served with a simple accompaniment of mashed potato. As an Englishman with only a moderate command of the French language I was prepared for the interaction with the staff that was to follow, "vous avez déjà mangé de l'andouillette, monsieur?" This is the correct and professional way for restaurant staff to deal with any Englishman who orders andouillette. I knew I was in a fine establishment. "Absolument, madame. Malheureusement, je suis Anglais. Mais on m'a recommandé cet endroit spécifiquement pour l'andouillette!" I was greeted with a smile.
The rest of my party placed their orders and, before departing from our table, the waitress made one final check, "Etes-vous sûr, monsieur?" Once again, a true professional.
This was the first time I had experienced andouillette with the Chaource topping. In my case, inspired by the famous song by Gildas Marronnier and his Prunelles. I was not disappointed, the robust aromas of Monsieur Lemelle's andouillette are perfectly enhanced by the earthy notes of the warm Chaource, resulting in a truly visceral taste experience. I used to love eating chitterlings as a child, but I was used to adding salt and vinegar. The seasoning of this andouillette, combined with the slightly acidic Chaource brought back the memories of those flavours. As it was quite early in the evening, I chose to drink a local blonde beer with my meal, which turned out to be a perfect choice.
