Here’s a hidden gem of both corfiot cuisine and hospitality - in my book Stou Maka is a Bib Gourmand level restaurant, using the Michelin Guide definition, as it definitely worth a trip from Corfu town; so be prepared for a Corfiot cuisine experience, not just a dinner. While you might be tempted to rather visit the better known grill house Ladokolla next door, Stou Maka is definitely giving them more than a run for your money. Ana and Spiros are a team of dedicated chefs that are bringing back old corfiot dishes using high quality, small batch, local ingredients. A lot of restaurants advertise “authentic cuisine”, but what you have to remember is you are not going to get from them the authentic flavour of a pastisata. For that you have to have in the pot an organically fed rooster, as the local used to cook in their homes, not the frozen supermarket chicken the typical restaurant will use when forced to feed hundreds of customers everyday.This is something Stou Maka does different, the team deciding the menu everyday by what is available on the local market in terms of quality ingredients, and not the other way around. That’s the first rule when it comes to quality in the kitchen. But let me cut it short for you: at Stou Maka I had the best salad, best soup, best slow cooked pork belly and best pastisata we had in Corfu, period. Don’t be afraid by the fact that there’s a fix menu everyday and you can’t choose a la carte. Go with the flow and discover the real taste of the island, and home cooking as it should be, made with soul and respect for the ingredients. Read moreWe just accidentally ran into this beautiful tavern of Anna and Spiros, because initially we wanted to dine at the grill house next to it. After realising that, we even told Anna about it and she was so relaxed about it, that we decided to come back another day and try her food. And we did. And it was just the best decision in our whole 15 days stay on Corfu. Both owners are just the sweetest persons and really love cooking. Everything is fresh and made just that day with ingredients from friends and small farms, butchers, fisher men etc.. hence there is no menu (because they decide every morning based on what ingredients they might find or be available what to cook) and you will not find Tzatziki, grilled souvlaki, gyros pita etc but real real real authentic food like Anna and Spiros learned from their grandmothers. The homemade bread was so good, that we even took some home with us. And you won’t believe what the check will be in the end for what you got served. We chose the menu where you let them bring you what they’ve made that day and we had an incredible selection and meal. We had a salad of fig pie chopped with kumquat preserved fruit , smoked pork loin and green leaves - awesome. We had Spetzofai - very soft - and aubergine with tomato and garlic. Meatballs in a lemon sauce with waxy potatoes - ham and egg pie - then roast chicken with rosemary potatoes and finally beef kokkinisto with pappardelle pasta . Everything was cooked wonderfully by the resident lady cook also referred to as Grandma- but she’s younger than me so let’s call her the resident princess! Front of house was her man Spiros, a lovely chap. She talked us through all the courses and their content - but is a down to earth lady with a great sense of humour.
