The most famous dish of Salim hotel is their chicken biryani. A good chicken biryani is distinguished by several key qualities:
Aromatic and Flavorful: The biryani should have a fragrant aroma and a well-balanced blend of spices, such as cardamom, cinnamon, cloves, and bay leaves, alongside garlic, ginger, and garam masala. The spices should infuse both the rice and the chicken, creating a symphony of flavors.
Tender Chicken: The chicken pieces should be tender, juicy, and well-marinated, absorbing the flavors of the spices and yogurt. They should be cooked to perfection, neither undercooked nor overcooked.
Fluffy, Separate Rice Grains: The basmati rice should be long, separate, and fluffy, not sticky or mushy. Proper parboiling and the right cooking technique ensure that the rice grains remain distinct and light.
Perfectly Layered: The biryani should have distinct layers of chicken and rice, with each layer retaining its texture and flavor. This layering is essential for the authentic biryani experience.
Rich in Color: A good biryani often has a rich, appealing color, achieved by adding saffron or turmeric. The saffron-soaked milk gives a golden hue to some rice grains, enhancing the dish's visual appeal.
Moisture Balance: The biryani should be moist but not watery. The right amount of moisture ensures the rice is cooked perfectly and the flavors are well-infused.
Garnished Well: Traditional garnishes like caramelized onions, fresh herbs (mint and cilantro), and sometimes fried nuts and raisins add texture and extra flavor to the biryani.
Balanced Heat: The spiciness should be balanced, complementing the flavors without overpowering them. The heat level can vary based on preference, but it should enhance the overall taste.
A good chicken biryani is a harmonious blend of these qualities, making it a delectable and satisfying dish.

Read moreAn old hotel in town that still manages to do business because of the sentimental value people have with it. mostly old people, they recommend this hotel if you ask them (most of the auto rikshaw drivers do).Tried Biriyani three times in two months, Below average food every time and it costs 180rs for a chicken biriyani. oh yeah not very expensive for a chicken biriyani. But for the quality, you can get this for 110 or 120 maximum in any other hotel in the vicinity. the hotel renovated recently and it makes it looks "kind of" good , but that's it .The cashier (I think he manages the hotel) always pressing the bell to call the waiters and it is irritating. he keeps on pressing the bell 5,6 times each time and it keeps repeating every 15 seconds. adding this to the subpar food you are eating its not a good experience in this hotel
for 180 rs you can get a decent biriyani in ramees hotel (at the time i'm writing this review) with a good ambience , good service . I am not saying ramees has the best biriyani. just comparing with the price...
Read moreA craving for the famed mouthwatering mutton delights of Salim hotel led me there on a weekend night. I had never stepped here after the renovation. I liked how they had retained the layout. Although what disappointed me was the food. Mutton curry was mostly full of bones than meat. I had to cleave off the little meat I could get off the bones. And the surprise. It wasn't the same mutton curry I used to relish with hot vellayappam years back. The taste had turned bland. It's missing what made it famous in the first place. And priced at Rs 240/-, I felt I was taken for a ride.
The service was good though despite being a busy evening. And topped it off with a coffee which was pretty good.
I definitely won't be returning here. Grow up. Just investing in renovation doesn't count. The food matters. Consistency matters.
P. S-A note to anyone planning to visit here. Keep cash ready for payment. Even though they sport a UPI QR code, the grumpy grandpa at the cash counter wasn't...
