Detailed review of Fabbrica - Originale
Our experience began with a bit of confusion. Despite the restaurant being only half full, we were told there would be a 30-minute wait. Odd, considering several empty tables were visible. Thankfully, they ended up seating us without much delay. Still, the initial handling lacked clarity and efficiency.
Ambience – 3/5
The interior is aesthetically pleasing – well-designed with a modern rustic touch. A black-and-white film showcasing Italian food played silently on the wall, adding a bit of charm and identity. However, the atmosphere lacked energy – not much buzz or warmth, and overall, it felt a bit flat. Not a bad setting, but definitely not memorable.
Food – Mixed Bag
We ordered five pizzas, each offering a different impression: Prosciutto – 3/5 A classic that disappointed slightly. The prosciutto was cooked with the pizza, which isn’t ideal – traditionally it should be added post-bake for texture and flavour. The base was okay – decent strength but not airy or light. Pepperoni – 3/5 Another “just decent” pizza. Lacked the bold, salty-spicy punch you expect from pepperoni. Passable, but uninspired. Calabrese – 4/5 The highlight of the meal. A flavourful recommendation from the staff – spicy, bold, and well-balanced. This one carried the spirit of Italian flavour with a good kick. Nduja – 2/5 A letdown. The nduja didn’t translate well to this pizza – it felt greasy, overpowering, and lacked cohesion. Probably best removed from the menu. Pesto Pollo – 3/5 A safe, inoffensive choice. Decent pesto flavour, but nothing that stood out. One of those pizzas that satisfies without impressing.
The dough across all pizzas was sturdy but not airy, lacking that delightful chew or lightness you expect from a really good wood-fired base.
Drinks & Pricing
We didn’t order drinks – and for good reason. The prices were outrageous. A glass of Spanish Tempranillo was being sold at the price of an entire bottle at retail. That kind of markup feels exploitative, especially when paired with the already hefty pizza prices.
Service – 3/5
Service was noticeably slow, with long gaps between interaction and food arrival. That said, the waiter’s Calabrese recommendation earned them an extra point – it showed a level of thoughtfulness and knowledge about the menu.

Seeing those reels and posts flaunting those charred borders, minimal toppings, that extra spread of olive oil, dollops of Mozzarella cheese. Yes definitely I have a thing for them because I am kinda drooling writing this up. Fabbrica has been in Kolkata for some time now. It's one such place, that every tourist is recommended as a must visit. They serve proper Italian Cuisine that actually tastes Italian. My order in Fabbrica: Speziato Pizza Fungi Quattro Formaggi . There are a lot of talking points in this review because this was the first time I had something like this, and how is it different from the Pizza we get from more household names like Domino's? Crust: This was a thin crust Pizzas and when I mention that, trust me, the Pizza base was very different. Yes it's chewy, but not like bread. It's more like a Mughlai Naan! You are gonna truly love having that. Moist as it should be, the Pizza base is a killer. Toppings: Tomato, Foot di latte, Spinach, Roasted Garlic, Red chillies, lots of Feta Cheese! Minimalistic and Exquisite! In every bite you can taste all of them without actually being able distinctly see them other than the Spinach and Feta Cheese. That's so unlike our Domino's Pizza, isn't it? Olive oil and other adds on: The use of olive oil makes things very different. I could actually taste the distinction. And I have to say, this was so good in itself, that I didn't feel like using the Oregano or Chilli Flakes at all. Do we ever do that at Domino's? No! To conclude, I cannot forget this taste. Domino's is still a good place to have economical pizza but if I crave for pizza, I now crave for something like this. . Pocket Crunch: ₹650 for Speziato . . Personal Note: Fabbrica has a classy ambience, perfect for a cozy date or a small friends outing. Reading the menu here is a serious errand. So do your homework before hand. Well its true and I have to say that as an Australian and a lover of great food from all over the world, I was absolutely shocked that Fabbrica Originale was worth writing a review for. Entree was Bruschetta with Burrata and Pesto with a requested substitute of the cherry tomatoes to a little sundried tomato which I thought made the dish even more delectable. But wait, how can you make changes to the menu? Well, first you need a host that is on top of his game and Im talking about Gordon. The most polite, empowered and experienced hospitality expert Ive encountered in a long, long time. Gordon know his stuff and importantly also knows that if he makes me happy, then I'll reciprocate. For mains, I just had to have the pizza and its was fabulous with fresh home made dough, thick and delectable crusts and just about the right amount of toppings to make each ingredient purposeful and very, very tasty. The wine list I wasnt overly crazy about particularly, the reds as Fabbrica must have been under the impression that the two Australian reds that they featured were of enviable quality. Hopefully, I have redirected their selections for the future. Anyway, back to the food. I don't normally do a desert but this time, I did partake in the chocolate souffle. Now, from experience, when souffle is good its great and when its bad, its terrible. Fabbrica Originale absolutely nailed the souffle and I would nominate them as potentially the best chocolate souffle that I have ever had!!.
