Review of Sazón by Michelin Chef Andrew Walsh: A Culinary Gem in Canggu
Located in the bustling Batu Bolong area of Canggu, Sazón, the latest venture by renowned Singapore Michelin Chef Andrew Walsh, brings an exciting dining experience to the island. Having received accolades for his restaurant in Singapore, which was named one of the world’s best, expectations were high, and I was eager to see if Sazón would live up to the hype.
The restaurant officially opened its doors in April and is part of the Holiday Inn and Regent Canggu, though it stands independently along the street. Parking is available at the hotel, but be prepared for a short walk to the entrance—there’s no direct connection from the hotel. The area is known for its heavy traffic, so plan accordingly; it can take over an hour to drive from Sunset Road during peak times.
Upon entering, I was impressed by the restaurant’s interior design, which features a blend of outdoor seating that allows you to enjoy the ambiance (and the sounds) of the street, as well as a cozy indoor garden and a vibrant bar area. The overall aesthetic is inviting and well thought out, creating a pleasant atmosphere for dining.
The cocktail selection is promising, with the sangria being a standout and a must-try. The nutty punch was also enjoyable, though I noted that the full spirits and wine list was still being finalized since they are a new establishment.
For the meal, I opted for the paella with Ibérico pork and mushrooms, and it did not disappoint. The flavors were rich and expertly crafted—no surprise, given Chef Walsh’s background and even his school for paella in London. The scallops were beautifully prepared, clean and savory, while the patata bravas were also a highlight, adding a delightful touch to the meal. Each dish was presented beautifully, showcasing the chef’s attention to detail.
One suggestion would be to consider offering smaller portion sizes for the paella as it is a signature that I wanted to try, especially for couples or smaller groups. The paella was quite generous, and I found it challenging to finish, which limited my ability to try more dishes.
The service team was friendly and knowledgeable, demonstrating a commendable level of service. However, it appeared that there were not enough servers to adequately cover the space, as I often found myself looking around to get attention. Nonetheless, the staff’s training was evident, and with a bit more distribution, the service could reach an even higher standard.
Overall, Sazón by Andrew Walsh is a delightful addition to Canggu's dining scene, offering beautifully executed dishes in a lovely setting. Read moreWhile staying at the soft-opened Regent, Sazón was naturally the recommended dinner venue. From greeting to drink and table service, everything was divine. We first opted to have drinks at outside terrace by the entrance; people watching while sipping on our signature cocktails. For dinner we first selected a table at the open kitchen dining area but after looking at the chef’s counter, our party of two is definitely more into interacting with the chefs. Lukas was great in his attention throughout the food service, always attentive and polite. Chef Javi, with his team of young chefs, was our dinner curator as we opted for the Feed Me set menu (recommended). With a minor non-pork alteration, every dish was excellent: timing of each plate was always right, temperature of each type of dish was perfectly served ready to be crunched without that piping hot filling, savoury taste fully balanced between sweet, salty, sour and spicy. Recommended dish? Seafood paella, watermelon gaszpacho, tuna-anchovy-chilli on skewer! This time we opted not to take any pictures so we can focus on taste and conversations with each other and the chef. Lets not forget about the beautifully lit and captivating interior of the restaurant. Sitting at the chef’s counter tends to give diners a different perspective on the ambiance. Try it and savour it! The food was outstanding. Every dish was a celebration of Spanish flavours, from perfectly cooked Paella to the most irresistible Patatas Bravas and Bikini and wonderful desserts like Carajillo. The tapas were a hit with the whole table—perfect for sharing and packed with bold, traditional flavours.
The cocktails were incredible—creative takes on Spanish classics like the gin-tonic and sangría, each beautifully balanced and refreshing. And the wine list was great too, with a thoughtful selection of reds, whites, and sherries that paired perfectly with the food. The staff was also happy to make recommendations.
