On Saturday evening we were strolling through Alberobello and came across Sinè. As we entered we were welcomed by Gianpaolo and gave us a nice seat overlooking the open kitchen. They had a smaller menu which I always prefer as the ingredients used tend to be more fresh. Well, fresh was an understatement. We were surprised by taking the antipasti and dish after dish that came, ALL were amazingly well cooked and prepared by chef Hugo and Antonella. The hospitality and vibe of this place is unmatched. They kept surprising us by bringing out the most amazing platters and dessert. Gianpaolo is thé most friendly maître. Hugo, Antonella and Gianpaolo are a well oiled team. So much so, we immediately booked for lunch the next day. And again, wow! The food, the ambiance, the friendliness, the hospitality, and so on.. everything works at Sinè. I can say that for me this was my favorite restaurant experience I had in Italy and maybe even my life. DEFINITELY recommend and would take a big detour to come to this restaurant. Finding a non touristy restaurant in Alberobello was a challenge, good thing we found Siné. Outstanding hospitality, thanks to Gianpaolo, who accommodated our requests and delivered an outstanding service. The food is typical pugliese with a touch of innovation and a lot of talent from the Chef. Everything was made fresh in house, from the Focaccia, to the pettole, the pasta, and the desserts.. Oh my, oh my..
The Octopus and Potato salad was outstanding, the octopus was done so tender, it melts in your mouth good. We had a taste of the Cavatelli with San Michele sausage and it was delicious, the Orecchiette alla crudaiola with tuna tartar was outstanding! The chef knows what he wants for his clients and is delivering the best! The desert selection was a surprise as we had a taste of everything they have in their menu, plus a free taste of a dessert they're coming up the next week.

We ordered a traditional menu, and a rib eye. Out of 5 dishes, only the appetizer was “acceptable”.
The orecchiette were too boiled, defeating the whole purpose of italian pasta “al dente”.
The shrimps where not fresh at all, and badly cooked. The meat would be dry and was impossible to peal.
The rib eye was a piece of badly cooked and dey meat, full of dense and uneatable fat. The meat itself had no flavour and it was dry.
The desert felt like a pastry from 2 days ago, stuffed with some cream. Hard to eat.
On top of that, a bad service. When we went to pay, they did not care AT ALL when we mentioned that the food was not up to our expectations.
All in all, we left the restaurant hungry and angry, paying 80eur, and we had to go eat...
