We had higher hopes for this place, but unfortunately, it didn't live up to our expectations. First, we were seated on barstools, which were quite uncomfortable. Being taller, the table felt too low, and by the end of the meal, I was in discomfort from sitting at such a poor angle. On the bright side, the roasted cauliflower appetizer was delicious. However, our main courses fell short. I ordered the pasta, which lacked flavor and included barely half an ounce of what was supposed to be salmon but tasted more like lox. My husband’s mushroom risotto also seemed undercooked, which might be normal for some, but we’ve never had risotto that crunchy. That said, the service was excellent, and the restaurant itself was charming. We would have loved to try dessert, but I couldn't sit on those barstools any longer. The meal was reasonably priced at $100 for two, but I don’t think I’d return.
Normally, I don’t respond to owners' replies, but after three days, I felt compelled to address a few things. My husband made the reservation, and he doesn’t recall being given a choice between barstools and table seating—if he had, he certainly wouldn’t have chosen barstools knowing I dislike them. One of the reasons we chose your restaurant was its unique appeal and strong reviews, but the main courses simply didn’t meet our expectations. We’re familiar with restaurants that serve high-quality, curated menus, and I’ve made pasta countless times myself. My husband’s dish wasn’t al dente; it was undercooked. From the moment we walked in, it felt like we were stepping into a home rather than a restaurant. The long wooden table, softly lit candles, hand written menus, dried flowers, and shelves of wine made the space feel warm and welcoming. But what truly made the night unforgettable were the people behind it.
Martina, who is the heart and vision behind Dispensa 63, greeted everyone as if we were old friends. You could feel how much love and purpose she poured into every detail — from the way the room was set, to how each dish was introduced and shared.
Another OG Martina curated all of the drinks with such care. While others enjoyed wine pairings, she made sure I never felt left out and created beautiful non alcoholic pairings just for me — herbal, sparkling, refreshing, and made with just as much intention as the wines. It meant more than she probably knows.
And the Chef, quiet, focused, and unbelievably talented, a story through every dish. Each plate was intentional, seasonal, and layered with flavor. Nothing felt rushed or overly complicated, just honest, gorgeous food made with skill and soul.
What makes Dispensa 63 so special is that it is not just about eating. You sit beside strangers, share stories, share delicious meals, and by the end of the night it feels like you have made friends. You taste the food, but you also feel the care behind it.
I was nervous not knowing the menu before hand, but wow. Every dish was perfectly curated - from the salmon in green oil and kumquat, lasagna with wild rabbit, pumpkin gnocchi, beef cheek, and the pear crumble - you can taste how local and authentic everything was.

We had heard all of the recommendations about Dispensa63 and the only night we could go was for a wine tasting, which we were lucky enough to get in off the wait list.
The staff opened the night by explaining the singular large table in hopes of creating an atmosphere of dining at a friend's house and they delivered beyond I think even their own imagination. We walked in only knowing our group of 4 but left with another two couples as true friends and continued our night at the hotel bar after many hours at the restaurant.
There was a local winemaker from a nearby valley of Valtellina who was showing off his biodynamic natural wines. The story was very interesting to hear and the wines were great and poured generously.
The highlight for me though was the food served with each wine. The best carrots I've ever eaten in my life. Every dish was incredible and paired nicely to the accompanying wine, and the chef was extremely accommodating (and happy to do so) when they noticed one in our party not wanting to eat raw meat. The risotto was fantastic and overall the quantity was much more than I was expecting going into a "wine tasting".
In summary, this was the best meal/experience we had on our long Italy trip and would heartily recommend it to anyone looking for a great meal and maybe some new friends along the way.
