I’m not an hamburger fan, I have to admit it. I like it but I don’t look for it. But in recent years hamburger in Italy it’s not only synonymous of Mac Donald’s or Burger King. If you go to Turin or Milan you will find a lot of new places to eat the so called “hamburger gourmet”. What does that mean? Well, it’s basically a burger made with good and (often) Slow Food certified meat, organic vegetables and other tasty ingredients .
Since June 2013, also here in Bologna we’ve got our own gourmet hamburger: it’s called Well Done and is located in the “Bolognina” area, just in front of the new Municipality building. The place is quite small but very nice: soft lights, wooden tables and menu written down on a coloured blackboard.
But let’s talk about food. The large blackboard points out that the meat comes from Tuscany and precisely from Pavana Pistoia , where the family Savigni has a farm and works the meat of animals reared in those lands. The products used to fill the sandwiches are also those of the consortium Black Elk, organic farmers and beekeepers who are committed to producing good foods with healthy farming methods that respect the earth.
You can choose between 9 different types of burger, from the classic to the “Well Done” (150 gr meat beef and pork blended with blond beer and worcestershire sauce , arugula , mayonnaise, candied onions, mustard black dotted wisdom and with Pienza pecorino cheese), from the cheeseburger (made with four Italian different cheese) or the “Spada”(with swordfish and tapenade). I tried the Well Done and my friend took the “AA” with beacon, asparagus and avocado cream.
With the burger you can choose between fried or roasted fried (I tried both, take the fried). You can also choose the sandwich bread between the classic, the Kamut , the Integral or the “Malt” , made with red beer, rye and oats.
Also desserts need to be considered. Such as the Robiola cheesecake with fresh strawberry puree or the Ice Cream Burger, with two iced cookies with chocolate and chopped hazelnuts which enclose a fior di latte ice cream.
For drink forget about the classics sugar drinks, they don’t sell them (great choice). But preference to juices , lemonades, smoothies and juices or craft beers of excellent quality like Leffe, Hoegaarden or Statale Nove from Bologna.
You will spend about 15€ for a hamburger with fries and a beer but if you’re really hungry you’ll probably need an extra refill…so the prices are average if compared to other gourmet burger I...

Although there was some confusing in the beginning as to whether the place was opening or closing (language barrier but we were both cheery about it) the staff was incredibly friendly and lively and willing to try to speak English. Upon coming in I was served a very large glass of beer for 3€ and was able to claim a small table. The waiter brought me a small bucket of popcorn while I waited for the kitchen to open -It says they open at 1830 but the kitchen didn't open until 9. For a starter I had "Boccini Di Bufala Do" which are large fried Mozzarella sticks and SO worth trying. I had a chicken and pork "meatloaf" burger called "Pollopettone". They take this meatloaf that is held together by some amazing melty parmigiana cheese and put it on this amazing bread with lettuce, Tomato, and mayo. It was melt in your mouth good and I had a hard time not wolfing it done as per the American way. You get a side of which I chose fries or "chips". They weren't the best I've ever had but still were very good. Ci hanno fatto accomodare nella saletta al piano superiore dove tutti i tavoli erano vuoti, ma ne giro di una mezz'oretta la sala era già piena (a memoria circa 20 coperti). La sala è illuminata male, i punti luci non sono nel soffitto ma ai lati della stanza con il risultato che se, come nel nostro caso, la lampada si trova alle vostre spalle, mangerete al "buio". Abbiamo ordinato un classic burger con doppia carne, un welldone, due medie rosse (leffe), 2 caffe, conto totale 45 euro. Si può scegliere la cottura della carne, ma la cameriera che ci ha preso l'ordine non ce l'ha chiesto. I burger sono accompagnati da un cestino (abbondante) di patatine fritte tagliate a rondelle. Ho trovato il classic burger "asciutto", capisco che le salse vengono date a parte (ketchup e maionese della Heinz), ma la sensazione e' che manchi qualcosa. La carne è decisamente di qualità superiore in confronto ad altri ristoranti, ad esempio il roadhouse o l'american graffiti. I prezzi mi sono comunque sembrati leggermente alti, visto che si può arrivare a spendere anche 15 euro per il singolo panino. Durante la nostra cena, abbiamo visto più volte il personale di sala in difficoltà, portando ai tavoli ordini sbagliati (semplicemente confondevano un tavolo per un altro). In definitiva, dei buoni burger "gourmet" (anche se l'impressione è che si mangi meglio nell'altro locale in via Fioravanti, sempre a Bologna), accompagnati da abbondanti contorni e una buona scelta di birre.
