If you are looking for the most unforgettable dining experience in Florence, look no further than B.O.r.G.O.. What began as a simple dinner for two in 2023 turned into a two-year journey that culminated in our wedding rehearsal dinner for 23 guests in August 2025, and it exceeded every dream we had. From the first bite to the last sip, Gabriele delivered not just a meal but an immersive, heartfelt celebration that blended world-class food, perfectly paired wines, and the kind of warmth and hospitality that makes you feel like family. Simply put, B.O.r.G.O. gave us the best dining experience of our lives.

Our story with B.O.r.G.O. began back in March 2023, when the two of us first visited for a quiet dinner for two. That night we discovered what is, hands down, the best pasta dish any of us have ever had: the linguine with burnt onion sauce and chive oil. Whatever Gabriele puts into this dish is pure magic. It will knock your taste buds into euphoric bliss and was a huge part of the reason we knew this was the place where we wanted to host our wedding rehearsal dinner. The food was beyond incredible (the best meal we had in Florence, without question), but it was the warmth, care, and personalization that made it unforgettable. On a whim, we proposed the lofty idea of renting out the entire restaurant to host our wedding rehearsal dinner two years later in August 2025. To our delight, Gabriele was immediately up for the challenge, even though it would only be the second time he had ever hosted a group this large.

Fast forward two years to August 2025: Gabriele took on the challenge of closing his doors to the public and curating a fully customized dining experience for our group of 23 guests (the restaurant seats about 27, so we nearly filled the place). He worked with us for two years, thoughtfully building a menu that balanced creativity, seasonality, and dietary needs (including vegetarian and allergy-friendly options) while pairing every course with the perfect wines.

The menu he created was stunning: • Starters: included half portions of the linguine with burnt onion sauce and chive oil, cappellacci stuffed with burrata and guinea fowl ragout, and crispy gnocchi with lightly smoked tomato “soup” and cherry mozzarella for vegetarians • Mains: (served family-style) sirloin roast beef with potato purée, rabbit roulade stuffed with escarole, plum, pine nuts, and crispy guanciale with chanterelles, plus vegetarian mains like chickpea flour pancake with burrata and vegetarian ossobuco • Desserts: baba rhum and Basque cheesecake, perfectly paired with Malvasia and Occhio di Pernice (a rare Vinsanto made with 100% Sangiovese grapes) • Wines: incredible Bolgheri and Carmignano selections that paired flawlessly with the meal

But the food, as spectacular as it was, was only part of what made the night unforgettable. Gabriele welcomed us at the door like family and gave an overview of the curated multi-course journey ahead. His passion for food and hospitality made the evening feel deeply personal, intimate, and immersive. It wasn’t just a dinner, it was a celebration of life, love, and community, crafted with care at every step.

Every one of our 23 guests agreed: this was the best meal in Florence and one of the most memorable dining experiences of their lives. Every guest walked away raving not just about the flavors but about the sense of occasion and connection that Gabriele created for us. We would recommend B.O.r.G.O. not only for an intimate dinner for two but even more so for a special group celebration.

A huge thank you Gabriel for this dinner. This was the best meal I have ever had in Italy. I always have a lot of expectations when coming to Italy. I researched restaurants for hours before coming to Florence. We travel for the food. And still, to our surprise, it was really really difficult to find good restaurants in Florence. Your restaurant is a gem, I would say almost like a miracle, and it was the best pasta and the most interesting meals we've ever had in Italy. We're really grateful your restaurant exists. Without it we would have left Florence disappointed. So please keep cooking! The pastas were perfectly cooked and the flavours were a wonderful discovery. I can still remember the taste! Your homemade bread was also very comforting. The tiramisu was absolutely delicious and just by looking at it (and all the food that night) we could tell this was going to be better than any tiramisu we had had before. It wasn't just a dinner, it was a gastronomy lesson! Which we will not forget. I believe your restaurant is a must when visiting Florence and I will recommend it to my friends and family. We had good food and good service until the owner Gabriele started shouting at my friends because we couldn’t pay by card and didn’t bring cash. Very scammy move after all the fake smiles he gave to us while serving dinner.

When we asked for the bill he started acting like his card reader stopped working, and just sat in his corner instead of chatting to us.

It was a Saturday night and the restaurant was empty, so he assumed he could be free to make us feel uncomfortable and scream with no reason. Oh, the restaurant wasn’t empty because it was late, we were the only table since 9.30pm. Good luck Gabriele, scammy business won’t bring good results. (restaurant round the corner has same prices and it was fully booked)

EDIT: Gabriele you don’t yell at your customers at any point. Say thanks to spoilt customers who being easy money to your restaurant. Perhaps, you might need a visit from your dearest friends Guardia di...

My family and I came across B.O.r.G.O. haphazardly, but man are we glad we did! The menu is very unique with adventurous options for those looking to try something new, but also had a couple safer options. The owner was incredibly friendly, and very accommodating of our gluten-free needs. He assured us he could make anything from the menu gluten-free (as he was also the chef), but was happy to confirm our selections were gluten-free. THE FOOD WAS AMAZING!! The quality of cooking was next level, and it was definitely some of the best food we had our entire trip. You can tell the owner takes great pride in his food. This is my number one restaurant recommendation for anyone in the area!
