Ok, I have to say that this review hurts my heart to write and I am not sure where to start. However, let me start by saying the chef was dining in the restaurant while we were eating. While our server was explaining the specials, the chef (not sure how to type this) made a noise like you would call a dog to our server to bring them a bottle of water. Our server stopped what she was doing and went to bring her water. Keep in mind the chef could have gotten up, and walked 10 ft to get herself a bottle of water for their table. This was just the beginning but obviously we thought that was rude and lazy. At this point we were ok with it as our server explained that was the chef in which we were fine with. However, the food was below average at best. Honestly, I make better food at home with lesser ingredients. Not once, did the server come over and ask how our food was and let me be honest, it was not good. It’s the very first time in a restaurant where I said, gross. Not all of it was gross but I took a bite of my pork chop and there was a pile of rosemary hidden underneath the mashed potatoes that was wildly gross. My gf and I are not complainers, not ever, but this was an absolute terrible experience. I tried my gf’s fish and it was mushy and the best part of her meal was the tomato sauce and the bread which was actually good but everything else was awful. If I was that chef I would be embarrassed and ashamed at the food my restaurant was producing and the way she treated her staff. My hope, is that this review points you in a different direction when picking a reservation and does not sound angry or spiteful.

Updated my review based off of wild statements by the “owner”. Sorry, had to post screen shots as the owner clearly knew I would be unable to respond to his...

I recently dined at Cibrèo Trattoria in Florence and unfortunately had a rather disappointing experience. The language barrier was a significant challenge, as our waiter did not speak English, making it difficult to communicate during our lunch. Due to this, we ended up ordering two menus without fully understanding what we were getting into.

The first course consisted of two vegetable soups that were notably lacking in flavor and were served in very small bowls. Additionally, we were served three dumplings, one of which had a hair on top and all were overly oily and unappetizing.

For the second course, we received two bao buns with pork and burger fillings that were both excessively fatty and disappointingly small. A side of rice with curry chicken was unremarkable, with nothing particularly noteworthy about it.

However, the lowest point of the meal came with the last course, where we were served two udon dishes, one with vegetables and the other with pork. Both were immersed in a broth that was extremely unpleasant in taste, and we couldn't even bring ourselves to finish them.

What made matters worse was that, despite the clear issues with our dishes, the staff did not inquire if something was wrong or offer to make amends in any way. We ended up paying a total of 60 euros for this underwhelming dining experience.

In summary, Cibrèo Trattoria left much to be desired, with subpar food quality, communication difficulties, and a lack of attentiveness to customer satisfaction. It was a regrettable lunch that I would hesitate...

Sadly a very overhyped restaurant that relies on reputation and tourists who don’t know better. The waitress who served us was very kind - no complaints there. However when we arrived they seemed surprised by our reservation (we booked a month in advance) and without saying anything made us awkwardly stand around while they pulled together a table for us. The service was slow, they took ages to take our order and didn’t bring drinks out until about 15 mins after ordering them. Most importantly, the food was so so average… every dish hugely over-salted, and lacking all other flavour. The “green salad” was literally a head of lettuce (presumably washed but left intact, with all the leaves still attached??) with salt (too much) and oil… the bread and tomato “soup” was so heavy and oily and strangely so thick it is eaten with a fork. I was expecting a salmorejo-type soup and what I got was acidic, oily tomato mush. The only decent dish was the vitello tonnato. We were not at all tempted by dessert. To round it all off, we noticed the staff overcharged TWO tables while we were there - one was sent the wrong bill, the other was overcharged on the card machine while paying (the staff told the diner “it happens sometimes”) - other reviews confirm it does indeed seem to be a “mistake” Cibreo makes often to tables of tourists. I have dined in Michelin guide restaurants in many other countries (France, Spain, etc) and never have I been so underwhelmed by the experience...

My friends and I had been wanting to try this place for years, but we had heard it was very expensive... so we decided to try the trattoria when we read on their site that it’s about 25-30€ per person, including dessert. Well, that’s a bit of a stretch, we paid 40€ a person (bill split evenly in 3), and we got two appetizers, one primo, three mains, three glasses of wine, three bottles of water and two desserts. Like they say, the food is a traditional Tuscan with some unexpected and unique twists. The minestrone soup was normal and delicious. The almond pâté was sourish because of the yogurt but good. I didn’t realize when I ordered it that the baccalà was in mousse form, atop two super thin slices of potato and maybe three small leek pieces, but it came in a dish that kept it super hot and it was actually very, very good. The chocolate cake was nothing special. Good but ordinary. Our waiter was cute, although arrogant, and explained all the dishes to us in a very knowledgeable and helpful way... although his descriptions made all the menu items sound unappetizing!! Even the desserts! Luckily we were pleasantly surprised when our orders arrived looking quite tasty! To sum up, we enjoyed our meal for the most part, spent a bit more than we were expecting, and although we were happy we had finally made our way to Cibreo, we agreed once was probably enough!

The Trattoria is the second Cibrèo restaurant we try (they have three different types) and we are again more than happy with our decision. It's a great example of local cuisine with different daily options, surprising and making the choice even harder. Both times we visited we tried different dishes and we were happy with our choice. I'd recommend the succulent tartar, the cold veal tripe salad (surprising and tasty), and the pesto lasagna from the main menu. If there are pork liver with lemon and veal with tuna sause in the daily menu, do try them! Ask for the pear cheesecake from the desserts. It's not on the menu but if they have it, it's great - refreshing, not too sweet but with memorable pear taste. The service is very attentive, patient and friendly. We didn't have reservations but the place is small so it's a good idea to call in advance. The prices are reasonable and perfect for the quality, food, authentic atmosphere and service we got.
