What a delicious stop on our first day in Matera! The highlights: the service, the wine, the CHEESE! Staff does a great job explaining everything, menu is outside on the chalkboard, order inside. You need to walk down the stairs if you follow the Google map (will attach satellite screenshot to help those find the store)
We got a stracciattella with prosciutto and burrata with prosciutto. The cheese was warm and they were extremely generous. The flavor of the prosciutto was fantastic and the bread was nice and warm. We were recommended to get the Maduria primitivo wine (~20€) and it was a great pairing with our paninis.

We picked a small platter of cheese (burrata, mozzarella and stracciatella- which up to that point I always thought was an ice cream flavour!) and meat (mortadella) and it was heaven (more than enough for two). We actually picked up some ciabatta from the panifico across the road as the shop had run out. The strat was the winner though, super creamy and fresh, never had anything as good as that before. Panini size is massive, either to draw in the Instagram-obsessed or the Americans who enjoy massively ridiculous sizes. Imagine a normal sized panini with a whole burrata and an entire jar of tartufo or Thai chili sauce. How can one enjoy something drenched in sauce? If they actually considered the combination of flavors, I would rate this significantly higher.
