I am honestly thinking about their Spaghetti Assasina every day since we've left Poligano. It was by far the best thing I have ever eaten in my life. And yes it is authentic to the Puglia region and vegan by default. The tomato sauce is reduced on the pan so much it becomes extremely intense with crispy caramelised bits of the pasta being the absolute best. What a symphony of flavour! Bruschetta pugliese is also delicious with local variety of rocket on top that taste nothing like I've ever tried before but was incredibly good. I've also tried the orchiette cime di rapa which is vegan if you ask to remove anchovies but we always came back to Assasina and ended up eating here every day.

Word of warning - this place is extremely busy so 1. You will most likely have to queue for the table for a considerable amount of time 2. Best pizza in Polignano a Mare! The pizza was absolutely delicious and so well priced! 6 euros for an absolutely delicious Margherita pizza. My husband had the My Puglia pizza, based on the waiter’s recommendation and he absolutely loved it! But honestly all the food is absolutely delicious: we had a salad and the pistacchio meatballs (which is rich and creamy) for starters and the spaghetti all’assassina is to die for!
