I can without a doubt in my mind call this place the best resturant in Polignano a Mare. I was in Polignano for a week and ate there several times. Each time I was a marvelous experience!
Atmosphere: The place is located a bit outside of all the hustle anf bustle of Polignano, so its more quiet and cozy. Inside was really nice, but of course we sat outside. Very cozy lighting. Its located next to a road where some cars pass by, but you hardly notice them. The kitchen has a semi open grilling area where you can see some of the food being prepared. The bathroom is clean and fully equipped (I say this having been to several other bathrooms in Polignano).
Staff: The owners are super sweet and very welcoming. Their staff is very serviceminded and polite. The guys all seem like they are having fun and are very good at making you feel comfortable. If you're lucky, you will also have brief company by the restaurant's black fluffy cat.
The food and wine: The food is absolutely delicious! All the produce is fresh and freshly prepared. You can both see, smell and taste this. Everything is so tatsy. The restaurant prizes itself on their meat, and you can understand why. It's so tender and tasty. Regarding the wine, they have a sizable wine list and are happy to recommend a wine for you. All together we had 5 different bottles of wine that were all great. Also, the one guy makes his own limoncello and it is eye-watering good.
On our visits we had these dishes, that were all so tasty and interesting. Nothing repetitive, every dish was its own: -Beef carpaccio with rocket, grana, extra virgiin olive oil and lemon -Orecchietta pasta with beef and tomato sauce -Tagliolino pasta with goose breast, datterino tomatoes, fried zucchini and toasted almonds -Gnocchi with leek pesto, porcini mushrooms and dried tomato -Marinated grilled strip beef. We got it with a side salad and some fries to share. -Veal cheek with mashed potato -Pork rolls stuffed with local and seasonal vegetables and spices -Spaghetti with spisy tomato sauce -Duck leg in pistacchio crust and citrus fruit honey -Chicken strip salad -Artichoke hearts
Prices: I think everything was reasonably priced. At least for me it was fine.

The only issue I had was with the service provided by the staff which was nowhere near the standard I had received from other restaurants in the area, starting with the wait for a chips that were ordered with the main. despite the fact asking all the members of staff where the chips where The chips came after myself and my partner had finished our mains Staff made no attempt to make a apologies over the food been very late and the staff attitude to us visibly changed which is not acceptable service.
It took until we brought it up at the end and a conversation with the owner to get a apology
We understand that the restaurant was busy but talking to the customer about a delay would have prevented the issues that arrived from this. It would have only taken 10 seconds while they passed our table.
Even with the experience I had with this restaurant I would recommend you go and try out this restaurant as the dishes we had were fantastic & of a great quantity and quality.

It’s a very small restaurant, you have to book, and expect to wait ~30 minutes when you get there at the time of your booking. I’m not going to get into the whole debacle I had with the person at the door, just don’t expect a 5-star welcome.
The waiters are very helpful and really nice. They know the menu well, and made great pasta/gnocchi recommendations. For that I’m giving the 2nd star.
This is a place known to serve the best meat in town. The menu even has a story about how they choose quality meats and serve only the best. We ordered 2 of the recommended filetto steaks - we ordered them medium. We got 2 well done steaks, that tasted grainy and disgusting, to the point where I couldn’t even swallow it. As we had already waited a long time for the table and the food, I wasn’t interested in waiting for them to remake another one. I complained to the waiter, and expectedly, nothing was done.
