Le Mani in Pasta — Restaurant in Rome

I traveled all around Italy for two weeks, ate at all price points into the hundreds of euros per meal, and this was easily the best pasta I had, which also happened to be among the least expensive. For value, there was nothing remotely close.

I came back 5 times, 2 at the beginning and 3 at the end of my trip, and ate literally the entire menu. While all of the toppings and sauces were great, its greatest strength was really nailing al dente in the pasta in a way that some came close to, but none quite matched.

As such, to provide some balance, the quality difference between here and others is most notable in the thicker pastas. Thinner ones like orecchiette and fettuccine are still top notch and possibly the best I had, but it’s a closer race.

100% worth seeking out.

That said, it’s kind of hard to find. Maps has it in the wrong part of the market for me. It’s booth 58, which is the westernmost column and the second row from the south, in the SE corner, directly west from the NW corner of the main seating area. This is not one of those places that sell pasta, pizza, suppli, kebab, and biryani under one roof. No, these guys do pasta and they are damn good at it. I tried other pasta places but I keep coming back here because they make it with love here. The owner is a really nice guy who speaks English for those of us that don't know any Italian. And he'll help you pick a pasta that you'll like. I got the cacio e pepe and a fish pasta for my friend who really liked it.
