The bread is fresh and homemade, particularly moist and chewy, and the breadsticks are excellent as well. They go well with the olive oil made from the family’s farm. The tra Sicilia e Giappone is emblematic of the sicilian Japanese fusion going on. Raw sea bass, without much flavor and a little chewy, is served with slices of tomato in the housemade aglae sauce. The sauce is more savory and piquant than dashi, but also with light vinaigrette properties. There is also a delicious shrimp tail at the center. The gnocchi comes in a sharp shellfish bisque-like sauce that blends beautifully with soft ricotta. The ravioli is simply stuffed with ricotta. It comes with a black cuttlefish ragu with chunks of it inside; aptly named “black and white”, it’s an effective combination. The pancetta pork belly are four pieces of thick cut pork belly, flavored in a sweet miso sauce and lentil purée. These two sauces go really surprisingly well together, and is quite ingenious. From the very first moment, everything was flawless. The service was warm yet professional, striking that perfect balance of attentiveness without being intrusive. The atmosphere was elegant but welcoming, creating the ideal setting for what would become a remarkable dining journey.

Read moreI wish I could give this place a 10 star. Best meal we had in Sicily! The place is owned by three wonderful sisters - one front of house (Adriana) one sommelier (Alessandra) and one chef. The chef (Gabriella) graduated from the Alma di Gualtiero Marchesi cooking school and then went to Japan - which is reflected in the menu. Adriana and Alessandra left their jobs to support their little sister in her dream of owning a restaurant, and they so deserve to do well. The attention to detail was unreal (they had done all the ceramics themselves, only olive oil from their family farm down near Gela) and the service and food was simply outstanding. If you're ever in Syracuse and you're a proper foodie don't go to the tourist traps in Ortigia - have dinner at Aglae then enjoy the passeggiata over the bridge!
