First of all, Gen-ei does not offer Tonkotsu style ramen, it was established with creating the sauce using only natural ingredients only. Their classic version is a shoyu ramen in essence, but the homemade tare was created using high quality ingredients and pack a lunch of flavor. Dandan mien’s home made chili oil added a kick for spicy lovers and the shrimp oil version is rich with savory intensity. Different noddles are used to complement the chosen flavor, most memorable part is the soup, it is a layered magic potion, savory but light, just the right amount of saltiness infused with endless umami.
