Someone from Michelin should review this place. My wife and I showed up 15 minutes before our reservation. The Chef greeted us and seated us immediately. We were the only ones inside during the whole meal so it was quiet and relaxing. There was just one point the chef was breaking apart ice in the dining area which was a bit loud.

We had the wagyu beef + sushi dinner. It started out with an appetizer of various vegetables which tasted delicious. The spiciness of the raw green onion was complete changed by it's accompanying sauce. And the Okra was cooked just enough to remain its crispiness.

The second dish was sashimi with some sort of soy sauce foam which cut easily with chopsticks to add to the fish.

Wagyu beef was cooked to perfection, and the wasabi, salt, and sauce paired well with the beef. Every slice of beef was cut meticulously and evenly.

Next was a cup of steamed egg, but the kicker was the small bit of sauce in the middle I don't know what it was but it elevated the whole thing from just a simple steamed egg cup.

This was followed by various nigiri. The highlight of these were the rice which had a unique flavor full of umami that accompanied each sushi perfectly.

Their miso soup was also also rich with flavor, though I wouldn't say it was mind-blowing. Definitely one of the better miso soups I've had in my trip in Japan, though.

The tamago was very smooth. The torched crust almost resembles a creme brulee.

Everything about the meal was well thought out and executed. I understood how to enjoy each dish and was introduced to many new ways of approaching different foods.

Sushi Kakujuan in Fukuoka was an unforgettable experience, and I’m so glad I didn’t cancel my reservation after traveling from Beppu! We had the Wagyu Edomae Sushi Course (7 dishes), and every bite was pure perfection. The sushi was incredibly fresh, beautifully presented, and expertly crafted.

One of the highlights for me was trying butter soy sauce for the first time—such a simple yet mind-blowing flavor combination! The service was also fantastic—very English-friendly and welcoming, which made us feel completely comfortable even though we don’t speak Japanese. The chef stopped by a few times to check on us, making sure everything was perfect. He even thoughtfully asked before adding wasabi to my son’s sushi, which we truly appreciated.
