I always avoid going to restaurants that usually have long queues. This time at the recommendation of my hostel, I went to Ramen Taiga not knowing I had to queue for the ramen. I arrived at 6:15 pm and found there were more than 10 people lining up in front of the shop. As I was craving for ramen and did not know where to go if I did not wait, so I stayed. After about 45 minutes waiting under chilling weather, I got my seat. There are only around a dozen bar seats in the restaurant. After I sat down I got offered a tiny glass of juice which I believed was some sort of veg juice. I learned that while waiting for my ramen the juice will help to prevent your blood sugar rising quickly and the formation of fat in your body after you eat carbohydrate. What a considerate gesture. My order came quite fast as the waitress had taken my order when I was waiting outside. I had the black or squid ink miso ramen with an extra portion of pork and an egg. The pork Char Siu, which is said to be from Noto, looked pinkish and was tender without the unpleasant pork taste. The noodle was medium thick and chewy though I could not taste the flavour of wheat as the squid ink miso broth was quite dense and strong and a bit salty to my taste. The egg yolk looked a bit unusual as it was almost red in colour rather than the usual yellow or orange but the taste was normal. Overall I think it was a great bowl of ramen with quality ingredients. The downside is you have always had to wait. For an impatient person like me, I find it challenging to spend 45 minutes waiting for a bowl of ramen that I normally get it done within 15 minutes.

This is my first time in Oshawa. Arrived at 10:40 on a weekday Thursday. There were already 5 people in line. We were seated as soon as it opened. The smiling and responsive lady at the restaurant made me smile myself just by looking at her while I was waiting. First of all, she asked me if I also needed an apron before eating since I had a pre-meal vegetable juice and was wearing a white shirt. I ordered the Miso Ramen, a special bowl of ramen noodles with a lot of meat and a boiled egg. It was served with a lot of meat and a boiled egg on top. The chashu pork was moist and tender, and the taste and aroma of the miso soup, ginger, and yuzu made me instantly fall in love with it. The char siu pork is grilled to perfection and goes well with the rice. The boiled egg is also excellent, with a richly colored yolk and a tender texture. I even finished the soup. Thank you for the best miso ramen. I will definitely revisit. About three parking lots can be parked next to the store. But many people were parked in the pay parking lot in front of the store. I want to eat the crab and salmon roe bowl next time.

Pictured are the 黒味噌らーめん / black miso ramen and the 冬季限定牡蠣らーめん / winter special oyster. (ig @wei.oframen for my ramen log 😳) Taiga is a must-hit shop when you visit Kanazawa. They serve a smooth miso broth that I enjoy quite a bit. The black miso variant here incorporates squid ink into the broth but in all honesty, I didn't taste much of that flavor so you might as well just get the regular or the spicy variant. I love going overkill with toppings but I feel like the chashu variety here could be better. Both of them kinda tasted the same texture-wise. My friend and I came back to Taiga for dinner because I wanted to try the winter oyster gentei and he wanted to try the tsukemen. I'm pretty sure we both liked our second bowl here at Taiga more than the squid ink-infused miso we got earlier. I think the thing that kept me from giving Taiga a 5 rating was the chashu toppings, and here the oyster toppings completely solved that problem. The soft and plump, perfectly cooked oysters paired perfectly with Taiga's smooth miso.

I got to know this place from a friends recommendation who visited this ramenya. It was hot summer day lunch during my visit here. The line is bearable. They will hand the menu in advance while queueing that makes them efficient. Once seated they will serve with concentrated ginger juice which is refreshing and heard it had good benefits to lower blood pressure and same time aids digestion. I got a heap bowl of special miso ramen. It has large thin sliced of chasu, bamboo shoots, seasweed and softboiled eggs, I also have noto pork side dish. The soup base is quite good, doesn't have strong taste, easy on the tongue. The noodles is slightly thick, just ok to slurp. Noto pork rice is complementing well the ramen. I guess having no breakfast makes me appreciate this meal a lot. I would say the queue was worth it and definitely recommend it for Ramen 🍜fan out there.

Visited during a weekday and started lining up at 11:40. The line up was short and we got in after about 10~15 mins. It appears everyone tries their best to do their business as soon as possible and get out, so the line up shouldn't be too bad in general. A lot of seasonal special are only available during the winter time, so i went with the the noto beef gyu don and squid ink ramen with extra char siu. The gyu don looks beautiful and it was a smaller portion, but it's well marinated and taste delicious. The squid ink miso ramen was rich and a bit salty but with the chewy ramen it was wonderful. What surprised me the most is the smoked char siu which was extremely flavorful and the smokey scent is quite subtle. I was very glad that i got extra char siu to go with the ramen. Definitely a must visit ramen place in Kanazawa.
