Fujiichiban Nagono — Restaurant in Nagoya

This time, I tried the "rich and delicious tonkotsu ramen (with pungent flavor)". The soup that completely eliminates the peculiar smell of pork bones and the pungent seasoning are the best match. The free toppings of red ginger and grated garlic also complemented the mild soup. I also appreciate the lunchtime service where small rice is provided for free.

I had miso ramen and rice (small). I chose sesame seeds, spiciness, and garlic from the free seasonings placed on the table and added them as toppings. It went well with the miso decoction and deliciously flavored soup.

This is a shop of "Fujichiban," a ramen franchise that mainly operates in the Tokai region. One of the features of this chain store is its rich menu. The soup for ramen ranges from the standard miso, salt, soy sauce, and pork bone to spicy varieties, and the side menu includes fried rice, gyoza, fried chicken, mini bowls, and more, making it fun just to look at the menu.

I chose "Nori Shio Ramen," which allows you to taste the "sea" with its scent of the ocean. You can scoop up the seaweed with a spoon that has a small hole in it, and it goes perfectly with the salt-based soup. The website describes it as "using Setouchi salt with a mellow flavor. A light taste with a deep flavor."

2023年10月17日（火） 14時頃に訪問しました。既にピークは過ぎており先客は1名のみでした。どのお店でも、ほぼ塩ラーメンに白髪ねぎとキクラゲをトッピングしています。今日も同じものをオーダーしました。店内は年季が入って少々くたびれた感があり、箸入れにスープの飛沫が不着して塊になっていたりと清潔感に欠ける点が気になります。塩ラーメンはスープがぬるく感じました。麺はしっかりと熱々でしたので余計に温度差が気になります。他店でも同じトッピングでぬるさを感じたことがないので元々の温度管理だと思います。味の方はチェーン店ならではの安定したものでした。他店との比較で相対的に厳しい...
