鮨 かうと ～梅田燈花1F～ — Restaurant in Osaka

After discovering rave reviews of this shabu shabu restaurant on various food blogs, my husband and I were eager to experience it for ourselves during our trip to Osaka.

We booked a reservation about two weeks ahead of our arrival and were not disappointed. In fact, our shabu shabu dinner proved to be a highlight of our culinary adventures across Japan.

The restaurant occupies a cozy space with private rooms, perfect for an intimate meal. We chose the uni and wagyu shabu shabu set which delivered incredible ingredients and flavors. The sea urchin soup and wagyu beef were of notable quality and freshness.

As we slowly swished the thinly sliced ingredients in the hot broth, they released their unadulterated flavors. The waitress was also patient in explaining the shabu shabu process, despite the language barrier.

Beyond the ingredient quality, the set price represented great value for such an enjoyable, leisurely dining experience. The immersive atmosphere in our private room, fresh ingredients and sincerely attentive service all came together to create a very special shabu shabu experience.

There is no question that this restaurant will remain at the top of my list for a return visit to Osaka. I highly recommend all shabu shabu and food lovers to splurge on themselves with a visit to this gem of...

Highly recommended!! Excellent service, attentive and sweet lady server. We love the vibe- chill, peaceful, pleasant ambience; not too serious. We got the dinner anniversary set (include a birthday cake) at 8250yen per pax. If without the cake will be 7500yen. Absolutely good omakase experience. Chef is friendly and skilful. English wasn’t a barrier as they try their best to translate for us. Food was yummy, delicate and fresh. We love the warm red vinegar sushi rice. Presentation was detailed. 鮨の一つ一つが懐石料理の一品のように美しく、趣向を凝らされている

澄花というお店に続く入口通路すぐ右に低い引き戸が。 よく見ると鮨かうとの看板。 体を小さくして入店。

隠れ家的。 カウンター8席〜10席。 席はゆったり、隣の席との間にはかなり大きな衝立あり、安心感。

お任せコース　5800円（税抜） ①天然平目薄造り 柔らかい身に尖った塩。 すだちを絞ると3味一体。 平目の奥深さを引き立てる ポン酢は一歩華やかな味 しかし平目の素材の旨みは隠さない ご挨拶としては最高の一品。

②蕪のすり流し 鳥獣戯画の器が可愛い。 蟹味身がなかに入っている お出汁が蕪からとった出汁のよう。 強すぎず程よく主張する蕪の辛味とやさしさ。 辛味があるのが美味しさを引き立てる

③ブリ大根 甘辛い醤油につけこまれ、お上品に盛られている。 大根以外にもお野菜が沢山のっていて食べ進めると薄切りの大根で挟んだ鰤が登場。 ブリ大根の概念を壊された。 ブリ大根てこんなにお上品に繊細にいただくことができるんですね。 美味しゅうございます。

④京都産濃紅たまごのだし巻き 生姜餡ととりぶしが卵の上にたっぷり。 たまごが紅い！正確にはオレンジ！ 夕陽の太陽の色。 お出汁もしゅんでる上に卵の黄身の濃さがグッとくる。

●スズキ　おろしポン酢 ●真鯛　山椒 どちらも黒い板に映る姿さえ美しい

●ホタテの磯部巻き なんと手渡し 醤油のこんがり感、海苔のパリパリ感、何よりホタテ自体がめちゃくちゃ美味しい…！

●〆鯖 脂の乗りが、この上ない。 鯖のお風呂に入ってるようだ。 周りに人がいるの忘れて悶えそうだ。

●本鮪赤身漬け これも漬けの味が強すぎることなく、素材の味を活かしている 和からしのせがまた最高…！

醤油はなく、鮨の1つ1つにネタに合わせた薬味が乗っている。 まるで懐石料理だ。

●クワトロ小鉢 ウニ、イクラ、中トロ、キャビア 勿体無いが全て混ぜて食べるのをすすめられる。 ウニ、トロが特に旨味がすごい。 北海道にいるようだ。 美味しいものかけあわせたら美味しいに決まっている。 ただ美味しいのレベルが違いすぎる。

●のどぐろの炙り 炙ったことで良質な脂がより引き出され口の中で溶ける！！！ 一瞬海で泳いでいるのどぐろが見えた。 こんなに美味しいお鮨になってくれて、ありがとう。

このコースで最高潮の瞬間。

●才巻海老 ぷりぷりで、尻尾に行くほどお味が濃くなる気がする

●まながつを手巻き 西京焼きのようにホロホロで、ミョウガ、紫蘇の花などの薬味が見た目も味も華やか。

●炙り金目鯛 鯛でぷりぷりという表現を使うとは！ いつもの鯛と違って歯応えがある！ 美味しい。

●煮穴子 ふわふわ過ぎて上手く手掴みできない。 本当に本当にそーっと優しく包み込んでお口へ。 ふわふわ、とろけるー！

●お品書きにない、かんぴょう巻き この順番でかんぴょう巻きはホッとする

お品書きをみて終わりに近づくと悲しくなる おかわりしたい。 本日の逸品はおかわりできるようだ。 のどぐろ炙りをおかわり。

●赤だし 途中で食べた才巻きえさば 大将が丁寧に丁寧に握るのも見ていて楽しかった。

●玉 濃紅を使っているにちがいない。 オレンジ色。 文章の終わりの読点のように、お皿の左端に置いたのが物語の終わりのようで素敵だった。 お味は甘くてまるでカステラ。 玉が最後は珍しいと思ったが、デザートの代わりということか。 恐れ入りました！
