Small but tasteful interior, with smooth jazz on in the background. The staff are a tight team working quickly to serve the lunch time crowd with quiet efficiency and good communication. No raised voices, no sense of stress just a well oiled machine. Everyone is focussed on their lunch and the only slurping of noodles is heard in the background, the sign of a high quality meal to come.
The meal was delicious. The broth was creamy and rich with a depth from chicken bones and dried fish? The idea to use a Handmixer to create a foam works really well and offsets the richness of the soup. The noodles had a good bite and the 2 kinds of charsiu were both flavourful and well cooked. The meat onigir was outstanding. The meat was so thinly sliced it was almost transparent and the rice was well flavoured, a great combination. The tsukemen noodles were thicker and offered great bite and mochi mochi kan. The gobo topping is a great idea to create a contrast to the creamy soup.
Being extremely critical the broth was a bit salty at the bottom (if you are planning on drinking it all) and the gobo could have been fried a bit longer to create more of a crisp as in places the gobo was quite fibrous and chewy and got stuck between the teeth.
Overall, a great lunch, well worth...
Read moreToday, I visited Tori Soba ZAGIN Main Shop, a restaurant specializing in ramen. We arrived around 5:30 p.m., and there were only a couple of people inside, but shortly after, the place was full. By the time we finished eating, there were people waiting to get in. To place your order, you need to use a machine located at the entrance, which is very convenient.
Once the order was placed, we went inside, where we found an open kitchen with a counter in front, perfect for enjoying the meal while watching the chefs in action. The staff was very friendly, and we were pleasantly surprised to see the chefs wearing ties, something uncommon in Europe, which added a touch of elegance to the place. The service was quite fast, and it was enjoyable to watch them cook while waiting for the food.
I ordered the chicken soba with an extra beef sushi (390¥ supplement), and everything was delicious. The chicken soba was very delicate, with a balanced meaty flavor that wasn’t too intense, and the noodles were cooked to perfection.
Without a doubt, it’s one of the best ramen I’ve ever had, with excellent value for money. I would definitely recommend this restaurant, not only for the flavor of the food but also for the attention and kindness...
Read moreRamen amateur here but I can tell you this place s beyond traditional ramens!
Arrived on a casual Saturday afternoon around 5-6pm. There was no line outside but were diners inside the shop. For my party of 6, they waited til the seats were available to seat us instead of seating solo diners behind us which was a nice gesture to make us not feel disrespected. The staffs were welcoming and accommodating and the food was beyond other ramen shops!
Noodles were bouncy and flavorful with soups clinging on the noodles. Every slurp was flavor bomb with just the right bounciness of the noddles. Soup itself was flavorful but not heavy, very satisfying and easy to finish the whole bowl. The cherry on top was the wagyu sushi- perfect for diners like me who wants the best of both worlds- chicken and beef!
I’d say chicken ramen soup was flavorful yet light while tonkotsu based ramen are flavorful but saltier and heavier.
I’d definitely visit...
