Fujiya noodle restaurant is not a place that is easily pass by. I only found this place through the Michelin guide.
It is inside the building, through an alley way next to the Susukino police station.
The menu has English translations and ordering is partially done through ticketing (vending machine) so staff don’t have to handle money (efficient!). If you don’t speak or read Japanese your are able to order with no problem.
Prices start from 700-850yen including as shown on photos and menus. Then you can add egg (highly recommended), green onion etc.
The two recommended broths would be the white soy and miso. Both very unique and enjoyable in there own ways. The white soy is lighter, less rich and refreshing taste as tot he miso is thick, rich, a more full bodied flavour and less saltier than the soy. Most definitely! I ordered their famous Pork Broth Miso Ramen for 850¥ and added a flavored egg for 100¥ more. The broth was really rich and lovely, with a nice, umami creaminess that was quite unique. I wished for more of their chashu, which was delicious and soft. The noodles were also perfectly cooked. Read moreSmall little hole in a wall place down the “new ramen street”. We first walked to the famous ramen street but it was so packed with liens for every single restaurant we decided to walk around and eat somewhere else.
We had to a wait a little bit inside the corridor before the waitress asked us to order on the self service machine (which also has english), and then continued to wait outside. When there was space we were able to sit down and our food was served shortly.
