We came here in mid-Ocotber when we were due to visit shirakawa-go village in the morning, wanting to try a Japanese style breakfast. The owner was very nice and uses Google translate to help with communication. Their main menu is rice with raw egg, served with miso soup. They listed where their ingredients were sourced from, which I like because you can see how everything was related. You can order additional toppings like cheese and nitto for 100-150jpy each. The negi-miso is my favorite additional topping. Unlimited egg is allowed for part of your set, miso soup is refillable for free, and rice is refillable for a price. Do read text on portion size so you won't be surprise by the amount of rice you receive.
I have never tried raw egg and rice before, so I was worry that I won't like the texture, which would have a slippery/ slick from the egg white. I am glad I took a chance on it as it was very delicious. If the texture is overwhelming, changing the rice to egg ratio would help. With more rice than eggs, you will get a more thick-sauce like texture which should be similar with white suace risotto.
I think we were the most surprise with the matcha latte... It was very rich and thick, almost like a dessert. I stole sips from my partner often. Tee hee.
