Élevé is a charmingly intimate wine bar and French restaurant with just seven counter seats and one four-person table. We managed to snag counter seats on a Thursday without a reservation and indulged in the chef's degustation menu for around JPY 30,000 per person.
Owner and sommelier Kei Matsuda, a true Burgundian, speaks fluent English and Japanese. The wine list is exclusively Burgundy, offering three Chardonnay and three Pinot Noir by the glass, plus an extensive cellar of vintage Champagnes and more red and white Burgundy. (A note for the adventurous: no Aligoté or Gamay here!).
Despite the lack of reservation, we enjoyed a fantastic meal: a swordfish appetizer, followed by squid on a mushroom bed that delightfully resembled foie gras, and a main course of French lamb. While all dishes were superb, the strict Burgundy-only wine list did somewhat limit pairing possibilities.
