Simply an extraordinary experience! We sat at the counter where we watched the Chef/owner Shinji Ishida prepare each of our 12 courses delivered with a perfect wine pairing for each by co-owner Sommelier Yasuhide Tobita. We ate fresh local ingredients, including over a dozen different types of fish prepared with unique vegetables and sauces. The wines (and 1 sake) ranged from Burgundy, Greece, South Australia to local Japanese varietals.
Even more than the food, wine and beauty of each course’s presentation was the hospitality and kindness shown by the owners. Chef Ishida spoke limited English, but still presented personally in English each dish and a summary of the ingredients. Sommelier Tobita spoke good English and conversed with us throughout the evening, giving us background on not just the wines served, but on Japanese cuisine and dining customs. It is a whole experience, having each dish explained to you in detail as it’s served as well as watching the chefs prepare in directly in front of you. Each dish was beautiful and carefully prepared and the chef seems proud of his work. They were kind and asked me multiple times in English if I was enjoying the meal. The kitchen behind the chef chat loudly, not feeling professional. Wine pairing is quite nice with modern style, but again. Quite feeling rushed.
