One of the best Niboshi Soup-based noodles in Shinjuku is Suzuran. Here the soup is great that it is drinkable. Niboshi usually have a bitterness but here don’t know why it doesn’t have a bitterness, it is more like richful dashi flavor with an ingredient of niboshi. Put simply, The soup has richful Dashi taste mixed with the expensive soy source. The noodle, soup, ingredients such as an egg, a slice of roasted pork fillets, and a diced onion.
What I call the good ramen is everything including noodles, soup, and ingredients match on the same high-standard line. That means, the good ramen must not have a specific point because the good ramen is all good on everything.

Read more新宿の繁華街からやや離れたところにあるからか、1日を通してそれ程混雑している様子は見られず、また客の回転も悪くはないため、最も利用客の多い昼食時間帯でもそれほど待たずに食事をすることが出来ると思います。 入り口付近に設置されている券売機で食券を事前に購入する必要があります。入り口を入って右にテーブル席が1つありますが、それ以外はカウンター席です。客席後ろの通路はそれほど広くなく、また出入り口には段差があるため、車椅子等の障碍を持つ方の利用はお勧めできません。 店名にもある通り、スープには煮干しをメインとした出汁が使われおり、濃厚な味わいを彷彿させる見た目をしていますが、比較的あっさりとしており、魚介臭さもほとんど無く、また後味もほとんど残らない、という味付けだと感じました。ガッツリとした濃厚な味を楽しむには物足りなさを感じますが、飲み会などの酒宴後の胃に優しい一杯を食べる目的としては丁度いいかもしれません。 スタッフの接客対応も、どの客にも一様につかず離れずの程よい距離感を保った接客で好印象でした。
