Tsubo is a charming little coffee shop in Zao Onsen village. The owner Shota is a craftsman barista, chef, and baker. Everything from his house roasted coffee, homemade cakes, the service, the cafe interior and atmosphere is executed with perfect attention to detail. I tried his lemon cake, sweet red bean, pour over, cold brew, walnut milk and oat milk lattes. Shota is a vegetarian so he only uses nut milk, but don't let that turn you off.
