Best meal in Los Cabo’s

Between San Jose del Cabo and Cabo San Lucas, there are innumerable mediocre taquerias; a surprisingly high tally of flashy, overpriced “farm-to-table” restaurants; and too many aspirational hotel/resort restaurants to count. Few do justice to the unique character of Baja cuisine.

Trópico is the best embodiment of Baja Cuisine we found: fresh, naturally sweet seafood; tangy, homemade salsas with the perfect balance of spice and deep flavor from roasted chilies; an abundance of shredded cabbage and crunchy veggies; and soft, pliant corn tortillas that can hold up to these glorious fillings.

We started with 2 tacos per person: crunchy veggie, smoked tuna shreds, tuna “chorizo,” and the distinctive grilled fish with caramelized onions and plantains. From the Smokey and umami-laden tuna tacos to the sweet-and-savory grilled fish, to the fresh veggie, we couldn’t get enough. These are Michelin-quality tacos, we thought, we can’t just order four! Multiple rounds later, including a few empanadas and tostadas, we were wishing we’d discovered Trópico earlier in our trip.

Don’t let the location and dining area (Trópico is little more than a few outdoor tables and chairs at a corner of a tiny strip mall) fool you. These are serious restauranteurs and beyond their warm hospitality, they are clearly committed to fine-dining-quality tacos with superior ingredients, including a delightful homemade pineapple and habanero salsa. Small tucked in the corner and unassuming, walking back from the beach I saw people enjoying tacos and glanced at the reviews. 4.9!! I tried to sit down at an empty table but found out that the restaurant is only designed to handle the volume based on reservations. This seems odd for what looked like a standard corner taco place. But the reviews are hard to ignore and I came back the next night armed with a resy.

All my curiosity was satisfied by chef Oman. These tacos are works of art. Imaginative, unique, high quality ingredients and most importantly made to order individually. Not mass produced, not meant for mass consumption. The smoked tuna taco has been permanently engraved on my tongue. My taste buds had never even been exposed to the flavor profile of the Dorado taco. This is a must visit place but come not to just satisfy hunger, but instead to experience chef Oman's literal manifestation of his art thru the masterful manipulation of fresh ingredients, spices that explode in flavor and shine in execution.

Come now while he is still housed at trópico, unencumbered by the fluff of fine dining, or the high price it comes with.

we came in here to eat and we left as diehard fans.

the couple that run this place do it wonderfully and the dog (her name is Lola) will likely lay at your feet protectively for the duration of your meal. the food. omg. it was fantastic. the actual food was amazing, but the food, combined with the pacing, the accompaniments, and the price point - unbeatable. you will not regret the last salmon taco (the name was unusual maybe due to mistranslation but it’s the last option under the taco section of the menu). i have not stopped thinking about the pistachio encrusted honey salmon taco we had. we ordered empanadas, ceviche, tostadas, and tacos - and i would strongly advise you try everything. the tostadas came with a tamarind sauce that just brought the flavours together. the aguachile is hot, but addictive. the trick is to never take a break from eating so you don’t feel the spice. their cucumber peppermint beverage is also a lifesaver and tastes delicious. the empanadas were like a thick crispy wonton with a slurry of mayo cheese sauce.
