Babero — Restaurant in Mexico City

This was my second time at Babero. Apparently the restaurant has a new chef since my first visit so I was looking forward to some refreshing changes. Unfortunately, while the ambiance and service are pleasant, the food remains mediocre at this price point. The dishes have an excess of salt and sauce. This is especially disappointing with such delicate ingredients such as prawns, beef tartar, truffles, risotto, and beetroot. Essentially, all the dishes we ordered. Over salting and over saucing did not allow the delicate flavors of these ingredients to be experienced, especially when smothered with heavily salted creams or pungent mustard. Additionally, the plating and presentation were uninspired. Imagine an amorphous brown blob of beef tartar prepared at the table that looks like dog food. Or a monochromatic blob of risotto or capellini. The shrimp roll was attractively presented, yet the milk bread heavy and dry, with smallish shrimp smothered in sauce. Overall, the service was good, but inconsistent—sometimes attentive, sometimes absent, yet always kind and pleasant. TERRIBLE PLACE DONT COME!!! They’re sooo racist. The service is awful we came in and they put us in the last table next to the back entrance. We asked to be moved and they said they were all reserved we insisted and the blonde girl said she will ask she went for 30 min and came back to say we can move. We stayed at the place for 2h ordered dinner and drinks. No one showed up the restaurant was so empty so she clearly lied I called her to confront her and she said that it wasn’t her fault and that it was instructions from her supervisors. My partner and I dropped in without a booking for drinks, and were sat at the bar which ended up being a wonderful experience. We were tended to all evening by Cristian, an incredibly skilled and engaging bartender that not only produced excellent cocktails but gave us some great insights into Mexican tequila and mezcal production. Sometimes you receive good service from bar staff that are doing it because it’s their job, but with Cristian it was clearly something he’s passionate about and keen to share with others.
