When we arrived, the table was beautifully set with fresh ingredients for every dish on the menu. We prepared four unique salsas, each crafted with its own technique, and dove into making the rich, complex mole sauce (27 ingredients—it was a masterpiece!). Along the way, we whipped up ceviche, aguachiles, tortillas, sopes, and empanadas—every bite more delicious than the last. Valeria filled the class with fascinating stories about each ingredient and its origins across Mexico, while Eduardo kept the energy light, fun, and fast-paced. We even had a bonus margarita-making session and tequila tasting, which added a perfect festive touch.
