A truly delightful, memorable, and delish meal and experience. I wandered in late on Saturday and was expecting to be told it was too late, as the kitchen closed in an hour. Instead, I was greeted so warmly by the owner and his remarkable team.

The owner, an international sommelier, made me the very best Negroni ever. He recommended my meal - the house specialty, Spaghetti Chitarra Allo Scoglio - and encouraged in a gentle way that I try the olive oil first, before adding salt or pepper; it was so beautiful that adding anything to it would feel criminal. He treated me as if I were then only guest.

The most beautiful part of the evening for me was watching him interact with his staff. He treats them with deep respect and an apparent gentle hand that allows them to learn and grow. The open kitchen allows guest a peak into one of the most orderly and peaceful kitchens I’ve ever seen. The young chef worked with intent but grace, as if creating a masterpiece with each dish. It was late, so the evening was winding down. I had the honor of speaking with owner Adriano for a bit. I noted his generous approach with his team. He talked about his young staff and said they are eager to learn and so hardworking; so he is teaching them. His humility was inspirational.

So, a magnificent meal in a beautiful space with lovely wine clearly curated by Adriano, a homemade bread selection, superior olive oil from a family farm in Adriano’s region in Italy, and an owner who cares so deeply about his profession, his guests, and his team? It’s worth returning to Amsterdam specifically for a second...third...fourth meal at this gem. Flawless food, flawless service, flawless evening. Thank you,...

Disgusting service. Ruined evening. The food is too expensive for such small portions.

My friends and I booked a table for dinner. Our reservation started at 18:30, but we all met at the table at around 18:45. We booked the table through the Table application, which added the reservation to our calendar from 18:30 to 21:00.

After eating, before dessert, we decided to draw in our sketchbooks. Then we were asked to leave the restaurant and not occupy the table with our drawings and ourselves... (at 20.00!!! - we spent 75 minutes in the restaurant).

When I entered the restaurant it was almost empty. There were free tables when we left. There was no queue at the entrance. I booked this table an hour before the visit, which does not really confirm the enormous popularity of this place...

I don't know what the restaurant staff didn't like - whether it was because we didn't drink alcohol (even though it was offered many times, very intrusively), that we didn't order enough food (62 euros for three apparently wasn't enough for them, although we didn't have the opportunity to order dessert), or that we were from Ukraine and Russia (when the employee saw what we were drawing, for some reason he asked where we were from).

Our creative community has been going to various restaurants for years, and this place is the first one that...

Dinner with my brother after and before a business meeting. These people can cook. The food is exceptional. The simple yet very good menu is delivered better than they do back home in Italy....The chef is a young man that i decided to meet after eating his Ragu of beef and pork and he was such a down to earth great guy. The steak is cooked to perfection and the deserts are again great yet simple. I liked it because usually in Italian restaurants abroad ( and i travel a lot ) the menu always has a local taste influence.... but not here, the food here is 100% ITALIAN and genuine.....AND SO IT SHOULD BE. the wine list is also superb , and you don't have to spend a huge amount unless you want to.... The atmosphere is cosy and warm and the staff is quick and they understand what you want .... plus they don't come to your table every 2 minutes , instead they serve you the food, they know their food is good and they let you eat it. PERFECT This was my second time in Amsterdam and my first time in this restaurant but i will be back with my wife next time ...

Just got back from dinner at Segugio where we had a wonderful time. Dario greeted us on a rainy night and made us feel warm and welcome immediately. Not a long menu but everything sounded delicious, also a deep wine list with many temptations. The food was fabulous, I had truffle risotto to die for and Mary had Marzano tomato soup and appetizer portion eggplant lasagna. Our wine was Lohsa Morellino 2017 that was inexpensive and delicious. Adriano, the owner, knew everything about his wines and was warm and gracious. We have travelled often in Italy and Segugio had everything we loved. Don't tell anyone.

3rd time in 4 years I have visited the Segugio in Amsterdam, and the quality and service is maintained throughout all these years with Adriano, the chief and sommelier (and as head of service), that serves a very fews but outstanding italian quality dishes. This restaurant symbolises for me the purest form of an Italian "Restaurant", serving daily based suggestions and some highly-recommended pasta dishes. Wine: Segugio is known for the founders Sommelier-experience, and will serve you exquisite wines out of his cave. If you are in Amsterdam, make sure to reserve your table, and enjoy the experience!
