The Journey: A Culinary Voyage through Aruba

Each plate at The Journey in Aruba tells a story of innovation, seasonal ingredients, and thoughtful craftsmanship.

The experience begins with an amuse-bouche that sets a high standard. A velvety pumpkin bisque, earthy yet elegant, is paired with a crisp chicken croquette that balances richness with textural intrigue—a welcoming note of warmth and comfort.

The first course presents a symphony of bold flavors: steak tartare and goose liver elevated by a sweet, caramelized onion compote. The interplay of umami and sweetness is both daring and harmonious, a dish that lingers in memory.

The second course continues with indulgence. Succulent lobster is paired with a burst of “squirting pasta” for a playful texture, enveloped in a beurre blanc that anchors the dish in classic refinement.

For the third course, the focus shifts to the local bounty. A perfectly cooked fillet of local fish is served alongside a creamy risotto and an assertive saffron hollandaise, weaving a bright, coastal narrative.

After a brief interlude, the fourth course brings hearty decadence. Braised short rib is impossibly tender, complemented by the smoky depth of miso and the sweet warmth of curried pumpkin. Each bite is a balance of indulgence and finesse.

The grand finale arrives with a hazelnut panna cotta, a masterclass in texture and flavor. Olive oil adds a subtle complexity, while cream and tart raspberry provide the perfect contrast, ending the meal on a note of pure artistry.

About the venue…

The Journey is an intimate chef’s table restaurant in Aruba, established by Chef Patrick van der Donk and his wife, Ivette. Chef Patrick, originally from the Netherlands, has a rich culinary background, having trained under Michelin-starred chefs and operated several fine dining establishments on the island under the Amuse brand.

In 2010, the couple opened Amuse Bistro, which gained recognition for its French-inspired cuisine. After a fire and the challenges posed by the COVID-19 pandemic, they embarked on a new venture, leading to the creation of The Journey.

Located next to the iconic red windmill (De Olde Molen) near Eagle Beach, The Journey offers an exclusive dining experience with only seven tables, accommodating up to 20 guests per evening. The restaurant features a five-course chef’s choice pre-fixe menu, showcasing Chef Patrick’s culinary artistry, often prepared in view of the guests. Ivette, a certified sommelier, curates wine pairings to complement the menu.

You have to eat here! If you're looking for a culinary experience, this is it. I am an amateur foodie, that loves experiencing new sights and tastes wherever I am. We had a front-row seat to watch Chef Patrick meticulously plate his creations, and each course was explained to you by the master himself. His wife Yvette is an outstanding host, alongside our server who always made sure we were looked after. Such a wonderful time to share with friends, a gentle-paced 5 course meal giving you ample time to converse. Would be a fantastic night out with your spouse (although we enjoyed ours with friends). Wine pairings are available, but we don't drink wine so I can't comment there. The restaurant has room for service for 20 or so patrons, which I think would be amazing for an intimate event like a wedding reception. The menu is due to change on a regular basis, but we enjoyed an incredible seafood introduction, next goose pate with blackberry, then a take on paella, next a surf and turf, for the main- lamb chop with an amazing potato mille-feuille, and finished with a fantastic citrus and coconut dessert. I really regret not taking pictures. You do have to be slightly adventurous to book a reservation where you're not sure what the courses might be (like we did) or I'm sure you could ask in advance to ensure you like them all. I’m speechless over how wonderful our experience was at The Journey Aruba! Having dined at many Michelin awarded restaurants across Europe and the US, The Journey is definitely “worth a special Journey.” A truly customized experience that felt as close to having a private chef while still enjoying the ambience of a space outside of your resort, the meal is absolutely one that hits every sense. Starting with a welcome glass of champagne on the lovely patio before beginning the evening, chef Patrick and his team went out of their way to have a non alcoholic sparkling wine alternative for me to feel included in the toast. Each course inside was visually stunning but most importantly delicious. It’s impossible to choose a favorite course but I left absolutely stuffed and craving the homemade baileys ice cream. Getting to watch each course be plated and hearing the thoughtful explanation behind our dishes was a true pleasure. I couldn’t recommend The Journey more highly and especially recommend for a romantic evening or a special occasion. We can’t wait to...

One of the top three meal experiences I've ever had. It might be the best, but I've eaten at some very fine dining establishments. The evening was incredible, with 5 courses after a champagne and amuse bouche before entering the restaurant. 20 people max, encouraged to mingle and make friends prior to, and during the intermission (yes, and intermission). The entire meal was at a wonderfully leisurely pace - from start to finish it took 3 1/2 hours. The food was incredible, and the chef came out and introduced every course and gave us a detailed description. There was also a wine pairing with every course, which entailed some wonderful wines. The staff was professional, super friendly, and knowledgeable. A pleasure to be served by them. And the chef clearly loves what he does, preparing each dish with care and the touch of an artist. I will definitely be back the next time I visit Aruba.
