We didn't get a chance to try the menu more. But we had the chance to try the bread to take away and the sourdough pandesal and country bread making class and we loved it. It was worth it.
I was bringing my partner, Virgil from France to the Philippines for the first time. We live in Montreal where we have no shortage of great bread, pastry and food. Especially living in the more french part of the city. My partner loved the bread and the experience. I wanted to take him to the Philippines and show him that we have good bread too. Honestly, this was probably the closest we have with the quality of their croissants and bread being as close or exceeding quality for certain shops.
We got to try the dayap curd croissant and the pandesal. The quality of the baking done here is no joke. We're so grateful to the whole team for accommodating us even though we were late from traffic. They made us feel at home and the passion of executive chef, and baker, and the staff are high. I love that there's such high level training involved for both the bread making and in the curation of the recipes. At the same time, you can really see the roots of the love for our country with the sourcing of local ingredients and for the knowledge and working with local farmers in order to produce such high level bread. I wish we'd had time to try the other food on the menu. But we'll just have to go back on our next trip with no doubt that this restaurant will be there waiting for us.
Part of the class included these snacks which felt so high class. There's a mushroom croquet which melted in the mouth and was filling. There's a salted caramel churro brioche like pastry which felt traditional in the technique but with a twist because it's not something I've seen done in this way. Salted caramel was also not too sweet. The grilled cheese was also very good. It's not easy to do this well because it relies on great bread. It's a simple dish but exceptionally done because it doesn't have anywhere else to hide behind if the bread is not well done.
Staff, baker, executive chef were so generous to us in sharing their knowledge. In our class, we had 2 people, one Korean and Filipina both wanting to learn in order to open their own bakery and they were so generous to share both information. Allow recording and to also really teach technique which isn't really possible to do just online or reading the book. The feel of the bread was important. There was also just so much bread sampled in the class. My partner had the happiest time just eating everything.
Thank you for your generosity and the courage to open a shop like this. That chooses to use international technique but leaning on Filipino roots and ingredients. I'm looking forward to seeing where this shop is...

We savored the flavor combination of almond and cardamon atop a crusty croissant. We haven't had anything like it before. Yum!
We were given time to pause after we consumed the pastry before our entrees were served. The plating was a feast for the eyes. We dug in heartily to savor the many flavors and textures. It did not disappoint. The salmon was perfectly cooked, the beef was oh so tender, plus the seasonings and accompaniments made our dining experience most enjoyable. The standout for me was the pickled egg. It looked like two pink petals with a jammy yolk at the center of each. It gently melted in my mouth and I wasn't expecting that!
