It was only after I started roasting my own coffee during the pandemic that I started understanding what set "speciality" coffee from the normal fare; and, during my subsequent travels to South America and Europe, I developed a special appreciation (and enthusiasm) for the rare coffee shop that roasted their own coffee (usually on-site or in an adjacent annex). The roaster-owner (or a relative) is usually brewing his/her own creation and is passionate about sharing their knowledge and love for their art.
All this to say that I found Asor to be an ode to the love of coffee. They roast their coffee and, even de-gas. onsite. As you can imagine, it smells wonderful here and the coffee tastes incredible. As one should, they have separate dialed-in grinders for their light, medium and dark roasts which I saw adjusted throughout the day (yes, I went multiple times a day for several days). I really couldn't find much to complain about except that they opened a bit late in the day (they open at 10 am). But since they do everything to the highest standards, I have become a huge fan of their coffee and their commitment...

Asor is run by owners with great expertise and love for coffee. Every morning, they meticulously dial the coffee grinder to find the best setting for the best tasting espresso. From roast level and temperature to grind size and dosing, they experiment and calibrate every variable to ensure the espresso extracts the best, nuanced, and complex flavors of the beans, which they also roast themselves. They use their expertise to mentor and train amateur coffee enthusiasts as well as other coffee shop owners to ensure everyone can extract the best tasting coffee.
