Honestly, I run a restaurant myself in Taiwan and am loathe to give anyone a one star review, but this sort of small request is never a big deal. Really simple to accommodate actually. Lettuce is stuff you want to move quickly, one of the biggest sources of food waste in the business. French fries cost more and last forever in a freezer.

I had not visited Sam Ryan’s before, but they responded so I ended up choosing them for part of the event. I am lucky I did. The atmosphere, drinks, and service were all excellent. But I ordered the most simplistic meal you could possibly ask for, chicken tenders and fries and those came to me "fresh"...which I guess to them means dry and hard as a rock as if they were just microwaved after being out all day.
