Given Sushi Bar 99’s Michelin recommendation, we arrived with high expectations. While some dishes showcased real culinary finesse, unfortunately, the service fell notably short and detracted from the overall experience.
Service Feedback
Despite being among the first patrons upon opening, we found the staff gathered in conversation rather than attentive to arriving guests. When we asked for a wine list, one team member appeared visibly annoyed that we didn’t immediately accept their initial suggestion. They proceeded to continue the conversation with their colleagues at length about the differences among tourists from various countries—a remark that felt out of place and unprofessional.
Upon choosing the Sushi Bar 99 tasting menu, our waiter responded by abruptly walking away without acknowledgment and was silently replaced by another server. This transition was jarring and unexplained.
Throughout the meal, we had to make an effort to flag down staff to refill our wine glasses—a small but telling indicator of inattentiveness.
At the end of the meal, my guest requested to finish the remaining wine while I asked for a coffee. Instead, both our glasses were filled with the remaining wine without clarification. While a minor oversight, it suggested a lack of personalized service. Otherwise, the remaining service elements were fine.

Tuna Tartare with Caviar: Well-prepared in flavor, though my guest encountered connective tissue in their portion, which affected the texture and appeal of the dish.
Prawn Tempura Salad: Started off well but became overwhelming due to excessive vinaigrette; a lighter touch on dressing would improve balance.

The table were we were seated smelled a little bit funky. The service was a little bit slow. I had to ask 2 times so that we can begin our order. A waiter that was giving us the food was literally serving our plates with his fingers at the internal of the plates. We also realised that the shrimps with the salad that we were given had less shrimps than the other clients that had the same order. The meat that we received was served cold and the waiters did not even bother to ask us if everything was alright or that if we needed something else. When we asked the waiter for the bill, they took 5 minutes to give us the bill and also we had to ask them 2 times for the bill. As soon as we paid she didn't even had a conversation with us or asked anything related about the service of the restaurant. As soon as we paid her answer was " Vale ya esta, gracias!". My mom stopped her from leaving our table because she only billed us 27 euros when in reality we spent more than 100 euros to eat there. We asked her that we want to pay the difference of the bill before leaving. The service was not that great that another person could have just left paying less than what he was supposed to pay. We even had another reservation for the evening but we canceled it because we told our friends from Switzerland about our experience, so they refused to go and eat there. We arrived early, and chose to sit in the bar, watching the sushi chefs work. I would recommend doing this, specially if you are 3 people or less, as it really gives another dimension to the meal, watching how they skillfully prepare the food.
We started with the miso soup, which had some truffle on it. Very tasty. The usuzukuri was very interesting as well, as you could see the mixture of traditional sashimi and spanish flavors working really well.
