This is a no-menu fusion bar-restaurant specializing in pickled and fermented dishes with Asian-inspired flavors. The restaurant offers four set menus: *Base* (3 small entrees) for 31 EUR, *Bruto* (3 small entrees + a main course) for 42 EUR, *Base Especial* (5 small entrees) for 44 EUR, and *Bruto Especial* (5 small entrees + a main course) for 55 EUR. You can select a menu based on your appetite or opt for individual dishes if preferred. I chose the *Bruto Especial* menu, which the waiter explained is divided into four steps: the first two involve selecting two small entrees each, the third allows you to pick one small entree, and the fourth is for choosing a main course. Each step offers around 4–5 options to choose from. The experience was truly unique. My two standout dishes were a small entree—*Korean kimchi with potato and bacon*—and the main course, *Beef tenderloin*. If you visit, I highly recommend trying these two items. The set menu also includes a small dessert, and complimentary bread is provided with tap water refilled regularly.

Absolutely loved the atmosphere. Sat in a large round table that was beautifully crafted. The ambiance was great for an intimate setting, business dinner, or casual meetup. Tried many dishes: 1) potato chip starter, fun and whimsical 2) sardine “toast” - so meaty, not over briny, and delicious. 3) clams - wow good in the broth. 4) rabbit - tasty 5) beef tongue and pig cheek. Ok. This was really interesting. Not the texture that I was expecting at all - almost sous vide without a sear, but wonderfully flavorful. 6) Russian salad with cuddlefish - could eat every day 7) crispy quail. Chefs kiss. Simple delicious. 8) tripe - honestly my least favorite of the dishes. I think this is more of a cultural / texture problem than flavor. Very unique if not used to tripe! 9) sea bass - that sauce! 10) deconstructed cheesecake yessssss!!!! 11) Gorgonzola foamy thing - good not great 12) pecan / walnut? Pie! Like home so so good All in fantastic meal and setting. Will return!

We stumbled upon this place while searching for another restaurant near our hotel and decided to eat here. Very modern decor, no fixed menu, they decide based on available ingredients and tell you the menu viva voce. All menus come with chips, an amuse bouche (for us it was a smoked rabbit dip) and dessert (pecan pie and a pink panther dessert). The menu was divided into fish, vegetables and meat, but choices could be made from any section for the three appetizers. I loved the ambiance, the food was delicious and innovative! It was also very reasonably priced at 28 euros for three Would recommend if you are looking for a different and fun food experience in Madrid! Gracias!!
