DO NOT EAT HERE. If you have ever been to a Michelin star restaurant and think this is even in the same universe, you will be sadly mistaken. This is the worst "fine-dining" restaurant I have ever been to. It's laughably terrible. This is a restaurant for people that want to share videos of a waiter (not a chef) blowtorching food for Instagram. I equate it to a band whose music sucks so they resort to on-stage gimmicks. At some point the restaurant cares more about the process than the product being put out. This is not a place for people that know good food. I never leave reviews, positive or negative, but my wife and I were so blown away at this monstrosity of a restaurant. DO NOT EAT HERE. I wouldn't go back if my meal was paid for. For reference, we had just been in Barcelona and San Sebastian and we devoured everything in sight, this is not a case of being weirded out by "atypical" ingredients; rather, a failure of concept.
Highlights of our experience:
We had to duck and walk under a table to get to our seat. At first I was like, "Interesting, they must have really good food to just assume people will do this and not think it's odd." Wrong. The first appetizer on the 65 euro tasting menu was some mundane fried dough that was cold, moist and rolled in some sort of Taki/Doritos powder. Terrible. The Cod/Bacalao (which was suggested was similar to Foie Gras) was ICE COLD. It was as if they had poured liquid nitrogen over it moments before serving us. The only reason I know they did not do this, is because they probably would have thought that was cool and instagram-worthy and would have done it in self-aggrandizing fashion at our shelf (we didn't have a table). I love cod, I love seafood, I love weird stuff - this was inedible. Was served the "Rolex" (we received one even though it was a a tasting menu for two) and they didn't explain it to us after placing it in front of us. Only after I started to attempt to eat the raw bacon, a server realized, stopped us, and proceeded to blowtorch it with a butane lighter. It was fine, it was bacon and foie gras. It wasn't great. Tomato with raw tuna. Mushy tomato. You'd be mad at yourself if you brought this tomato home from the store, like, "how did I manage to pick out the worst tomato possible?" Served with a ridiculous "tomato pectin gel" that added nothing, it was just reflective of the chefs "playing with their food." It was not cohesive in any way. Squid blowtorched at our table. Whatever. For 65 euro a person I'd prefer a chef cook it rather than our young waitress (who was all in all, very nice). Meat. We asked for salt (every dish needed salt). It never came. Desserts of cotton candy/ice cream and vanilla pudding with fruit and pine nuts was the most palatable dish.
We could not wait to leave and repeatedly said we had wished we had left after the first dish.
Additionally, it smelled like burnt hair for ten minutes during the course of our meal. I assume this was due to a blowtorch accident?
I did like the house music that was playing as it was so loud it drowned out my sorrows.
This is not a restaurant to take seriously. Also we asked for two glasses of wine, but were given a bottle, which was probably the highlight of the night as we needed to drink and laugh about this entire ridiculous experience.

It was our 3rd time in a SDD restaurant. We were a table of 4 people. We ordered 2 menus at 50⏠and 2 menus at 65⏠and 2 bottles of wine. Our main hosts were Oscar and Vitor.
Team : After a nice introduction by Oscar, we picked our menu and wine. Oscar would take the time to present the different dishes in both languages: english and spanish. Vitor was supporting him with some dishes. The team was super well trained which allows us to get the right time to eat and enjoy our dishes, without any rush or waiting time. Well done ! We also saw a really good team spirit : Vitor would support Oscar in our journey. The flow of dishes went super well and we didnât see the time flying. We definitely spent a good time - this was mainly due to a good organization within the team and a visible happiness within the team.
Cuisine : Even though it was our third time in a SDD restaurant, we were still surprised. The menu changed but keeps the same classic dishes as the famous  rolex . The explanation given by the team before we ate the dishes is really appreciated as it gave us a first taste of the dishes. When it comes to taste, we are definitely surprised to discover some ingredients perfectly matching.
Atmosphere : the atmosphere was great - the restaurant was spacious enough to not get too much noise and too many people around.
Overall, I really want to highlight the chefs imagination for the revisited menu. I will definitely come back for another updated menu. Another point to highlight was the team : the organization and coordination within the team were key elements for a good journey.
Future clients, Madrid is a great place for restaurant but SDD has something special. I highly recommend to stop by this restaurant for the food, atmosphere and team. We were the second group to checkin and were seated right away. Our server walked us through the menu and well the chef recommended options given the season and variety that they cater to.The service is generally friendly but can be inconsistent at times, with occasional delays between dishes.
While the food was generally good, we didnât really like the eel being served on the lion maine paste. Also the peppers were not as spicy as they were advertised by the staff and were an easy meal to finish on its own ( though it can be a varying experience from one person to another so watch out for that ).
The atmosphere was energetic, but the noise and music might not be ideal for those looking for a quiet meal.Not too bad as you can still talk. Obviously intimacy is not something that is clearly possible is such a setup as well.
