Incredible service, phenomenal steaks. The Argentinean manager running the restaurant is the single nicest restaurant manager I met in Valencia. I know the bar on service is very low in Spain, and even comically rude sometimes, but trust me this jovial Argentinean manager would be a hit in any city in the U.S. where customers scrutinize service intently.
First, he was very patient with our questions and gave us excellent advice on the different kinds of steaks. We ended up ordering the C5 Bife de Chorizo, the C7 Solomillo de Ternera, and the C10 Chuleton Gallego for my wife and I and our two teenage sons.
Second, the cuts were phenomenal and very reasonably priced compared to other high-end steakhouses in Valencia. The fat content of the T-Bone was much less than other steakhouses, where half the steak can be covered in fat sometimes. My teenage sons had a very easy time eating the beef.
Finally, I greatly appreciated the fact that they cooked the meats as instructed. We asked for medium rare, and we got medium rare. A lot of steakhouses I have been to in Valencia cannot get the temperature right and the steaks keeping coming out rare over and over again regardless of the instructions to the kitchen staff. I did not have that problem at San Telmo, and I greatly appreciated the fact that they got the temperature right.
My only negative comment is the reservation process, which requires a credit card and carries a 30 euro per person no-show penalty even on weeknights, meaning nights other than Friday and Saturday. Want to mention we've been eating this dish on several occasions in Valencia and definitely had better experience in other restaurants.
