Foc i Fum Valencia — Restaurant in Valencia

We found Foc i Fum on the same street that we were renting an apartment for the month of July. I ended up one afternoon having the menu del dia and thoroughly enjoyed my experience. I had never had grilled calamari served in a bed of mayonnaise and herbs along with a pitcher of local sangria. It was a wonderful introduction to the restaurant.The menu is heavily influenced by grilled and smoked seafood and meats which delighted me as Valencia is a perfect city to experience fresh seafood and meats. On three follow-up occasions my husband and I enjoyed not only two mid-day dinners but also two late night suppers and each time we were astounded by the variety, the quality, and the hospitality of Carlos and Paco. Amongst the dishes that were notable were: the mollejas( the best we have ever eaten), the freshly grilled large calamar(perfect for sharing), pulpo a la brasa, and pork ribs. A highlight that we repeatedly ordered was their version of gambas al ajillo which is exceptional. There is also a fine collection of wines to choose from and the proprietors are keen to promote local Valencian wines. The salads and side dishes are also beautifully prepared and presented. Originally, we went to an event nearby and happened upon this place as a result of their prior Google reviews. It absolutely lived up to the hype so it has become a "go to" for when we have special occasions or friends visiting. The grilled octopus is a must. I admit, I was hesitant to try it, but now it's something I will order every time we go. They also have great steak here which we've found is a rarity in Spain (I'm from Texas and grew up on a cattle ranch so my expectations for steak vary slightly from what Spaniards are accustomed to). Foc i Fum es un restaurante único en Valencia y parada mandatoria para amantes de la buena cocina. Si tienes suerto como yo, te cambiará tu perspectiva de vida. En el peor caso, comerás platos elegantes y únicos.

El concepto del restaurante es mejor dejárselo a su página web que lo explique pero baste decir que no es un restaurante de barbacoa o de carnes ahumadas sino que un restaurante donde el humo es el protagonista. Encontramos Foc i Fum por casualidad mientras visitábamos la ciutat vella como turistas. Como nuestro hijo de cuatro años solamente está comiendo steak y patatas fritas durante nuestras vacaciones, elegimos a Foc i Fum a través de una búsqueda por Google solamente porque ofrecía este plato. Cuando llegamos, una hora antes del cierre de restaurante, solo habia 5 comensales en 3 mesas. Se nos atendió rapidamente. Mi grupo de 3 adultos y el niño ordenó el solomillo con patatas fritas y una selección de diferentes entrantes para compartir: buñuelos de bacalao, carpaccio de vaca, mollejas de ternera y pan bao de cochinita. ¡TODO ESPECTACULAR! Yo, que no soy amante del bacalao, no podía parar de comer los buñuelos; el carpaccio aromatizado con un sahumeiro de encina de naranjo estaba fuera de este mundo. Las mollejas, súper tiernas por dentro y crujientes por fuera, son sublimes -un placer para el paladar. Por último, el pan bao: muchas reseñas aquí destacan el pan bao como un plato mandatorio para el comensal de Foci i Fum. Yo concuerdo con esto, pero tambien debo añadir, de manera muy subjetiva y personal, que el pan bao fue una experiencia religiosa para mí ya que el sabor de la carne evocó immediatamente en mi paladar un recuerdo de una cena memorable que tuve a los 5 años de edad, cuatro décadas atrás. Hace ya mucho tiempo que había consignado ese sabor al ámbito de los recuerdos cuasi oníricos que ya nunca se revivirían -esos recuerdos tan precisos e inasibles que te hacen preguntarte si alguna vez fueron realidad o pura alucinación. El primer bocado fue sorpresa y evocación. El segundo bocado fue golpe de emoción. Nunca antes un plato me habia provocado tanto sentimiento. ¿Qué más puedo decir despues de esto?
