Probably the worst ramen and restaurant experience I have had in a while. Ordered the lamb ramen without coriander, only to have them bring it out with a handful of coriander leaves buried underneath. The lamb broth tasted exactly like nothing. To make it worse, the broth was topped with an acidic liquid that completely took over the flavor, in the end I was left with a vinegar soap broth that I actually couldn't eat. It's one thing to have a bland dish, that's at least edible, it's another to have it served with an acidic blend of an ingredient you cannot eat. That made it inedible to me. I managed to eat the few lamb pieces in the broth, those were good enough, but left the rest untouched. (My colleague did fish out the noodle pieces and eat them) The two waiters circulating the floor were obviously aware but none of them at any point asked how the food tasted, so I didn't even want to bother to complain. At the checkout, I was hoping she'd at least ask if everything was okay, but not a word was uttered. Clearly not a restaurant that are interested in serving good food and the staff aren't interested in keeping the guests happy either, so for 185kr, take your money down that street to Max because at least the staff will hand you the food with "smaklig måltid" and a meal can manage to eat.
Update: the owner in their response to this experience is just projecting responsibility on me for not confronting their standoffish inexperienced staff. I had already asked for it excluded, that should have been sufficient. If they had been more informative, approachable and friendly, I would've surely asked for my dish to be returned. But unfortunately the front house staff failed create a pleasant enough atmosphere for us to raise complaints. I see this as the issue, not me refusing to ask twice for something I already asked for. One of the waiters did come up and ask if I wanted something else when we were all done and food time was past. Even this wasn't done in a manner we could get onboard with. He just came and irritably asked if I wanted something else to which I said no. Response to this review also shows restaurant isn't open to constructive feedback and addressing negative experiences in a proactive manner but rather just end up saying "you should've said something". Maybe there's a reason people don't dare speak up? Just a thought. Most of these positive reviews are clearly from glossy eyed tourists and this is definitely not a 4/5...

Saluhallen have it’s own identity in matter of social interaction but this place is fire! Being at least 20 times in their restaurant, I can’t point even 1 time when I’ve been disappointed! Last Friday I got Tan Tan ramen, I was about to cry! If there is a food that “speaks” comfort - that’s their ramen. Words can’t even grasp about the overall feeling of satisfaction. If you had a bad day - go visit! Be happy. If you want something fast, savoury and umami - go visit. If you need to warm up in a winter day - go take anything with Szechuan oil and come thank me!

Firstly, The service was great, she was friendly and attentive and she looked like she enjoyed what she does which adds to the atmosphere. The food was very good, the Xi'an lamb biang noodles: the noodles were consistent with authentic freshly pulled noodles, the lamb was braised perfectly although I think the pickle was a nice touch it added made the already sweet sauce (which I think tasted like siracha and tomatoes) even sweeter. The shoyu ramen was also very good and charshu was executed well only criticism is the pickled onion and the peas was a weird touch.
