Kantan Sushi — Restaurant in Lausanne

Tiny hidden non-descript gem for sushi, we pass it as we leave the Activ Fitness gym at Chauderon. I actually can't believe my luck that this place is in the 'village' that is lausanne. EXCELLENT sushi, hands down the best I've had in Europe. The rice is perfect texture, seasoning, and humidity (not dried out hello Sushi Shop and the like). Food is made to order and not left sitting in a refrigerator, so maximum freshness. Tuna and hamachi was so fresh and not too cold, just perfect. His hacked wasabi actually has flavor and the kick that is missing from the typical wasabi offered here in europe. I've been to Japan 5 times and have eaten my share of 'correct' sushi. The place itself has no seating so for takeaway. Perhaps if the chef plans to stay he could install a small counter. But I hope he has incredible success and can get a larger location to have seating. Please support this excellent place and the chef that has actually been trained by a sushi master. Fantastic choice for anyone visiting looking for a change of pace, tuna was incredibly fresh and well prepared. House soy sauce was amazing as well and I’m usually not even a soy sauce guy.
