Checked out the new Tsukemen spot in Zurich – a few thoughts 🍜~ I was really looking forward to trying this place after seeing their launch on Instagram – tsukemen is still super rare in Zurich, and the photos looked great!
I ended up feeling a bit underwhelmed though. The bamboo shoots were actually really tasty, and the chashu had a nice char and was well seasoned – definitely the highlights.
But overall, the tsukemen didn’t quite meet my expectations. The broth lacked that deep, naturally thick consistency I usually associate with tsukemen – it felt more like it had been artificially thickened, and didn’t cling to the noodles the way it normally does. Flavour-wise, it was okay, but not very memorable… I also missed that rich umami depth I’m used to from tsukemen spots in Japan :/
The marinated egg was also quite salty – a bit (or way) too much for my taste 😅
To be fair, I think their main focus might be on their classic Sapporo miso ramen, so maybe I’ll give that a try next time~
Update after revisiting
Came back to try their classic Sapporo miso ramen and was pleasantly surprised! The broth was rich, well-balanced and comforting – exactly what you’d hope for from a miso ramen. The korokke was also perfectly crispy and delicious.

Disclaimer, I did have high expectations after trying various tsukemen places in Japan; that's why my experience here was sadly just mediocre.
Things I liked: Chashu had a great taste, right amount of seasoning (slices were a bit on the thinner side though) Bamboo shoots, right balance of crunch and softness Noodle flavor The lemon sour 😜
Things I was disappointed with: Broth, it seemed like it was artificially thickened and it definitely lacked the right consistency and rich flavor (it tasted more like beef stock mixed with gravy) Noodle texture, it seemed a bit dry and sticky The naruto was missing in the broth
All in all, I would recommend to try their actual highlight which is their selection of different styles of (Sapporo-style) ramen. I wouldn't order the tsukemen again.
I did like their interior and decorations and since the place just opened, maybe there will be adjustments to the recipe (hopefully)! 🙏

The idea with signing your name in the queue for a table is simple and clever. The place is quite small but has overall a nice atmosphere and wasn’t too loud. The staff was nice and friendly, especially the waiter who took our order. And finally the food. I really liked the menu and variety of options, both with meat and vegetarian. The chicken karaage was probably the best fried chicken that i have ever eaten, the sauce was also delicious. The meat dumplings were also very nice. We had shoyu chashu ramen and chashu tantanmen and both of them were great, the broth was tasty and not too salty, the meat was super soft and the topings nice and fresh.
