阿忠虱目魚粗米粉 — Restaurant in Kaohsiung

Ah Chung isn’t about perfection. It’s about presence — a sensory plunge into Kaohsiung’s morning culture. It doesn’t dazzle with presentation, but it resonates. The flavors are grounded, the textures speak of skill, and the vibe is pure Taiwanese soul.

鹽埕區新樂街229號，白天賣的是沒有招牌的「阿忠米粉湯（下文簡稱：阿忠）」，傍晚則是「大胖豬油拌麵」，所以店內牆壁上會有兩種價目表，不要看錯喔，阿忠內用找位子填寫菜單交給店家即可，早上來還看到店家在處理虱目魚。

招牌米粉湯用的是粗米粉，有小卷跟虱目魚兩種，大骨湯頭、虱目魚肉、油蔥、韭菜珠，小碗米粉湯份量就不少，虱目魚肉仍有少許細刺，食用時要小心，湯味清爽，很適合當作早餐，對我來說湯味稍微淡了點，如果能再加入虱目魚骨熬湯，味道會更鮮甜，純粹是個人喜好。

虱目魚腸我選擇水煮做乾的，魚腸、魚肝形狀完整，不淋醬，直接吃，除了有兩三塊有點腥味，大致上鮮度不差，愛吃魚腸的朋友可以試試。

香煎魚背骨煎得焦香，啃食起來肉比想像中的多，鹹酥涮嘴，真的不錯吃，即使不蘸胡椒鹽也好吃，而且搭配米粉湯剛剛好。

炸小卷卵是隱藏品項，不在菜單上，要詢問才有，裹粉炸的小卷卵，外層炸皮較厚，加上已經灑上胡椒鹽，有點蓋過小卷卵本身的味道，不過一早能吃到小卷卵還是很開心。

阿忠是在地超過六十年的老店，食材紮實，用料新鮮，沒有亮麗裝潢跟店面，不小心還會騎過頭沒注意到，但熟客居多，對面騎樓還有幾位阿姨不停處理虱目魚，阿忠菜單品項不少，炸物區、切料區洋洋灑灑超...
