Read more能夠一天只營業三小時,也只賣四種麵食,肯定有他的道理在,到台中不造訪實在說不過去。而且據說這家店是被牛肉麵耽誤的滷味店,我反倒認為是被牛肉麵耽誤的乾麵/陽春麵店。
進店後先找位子(人多時需併桌),再到滷料區排隊點餐,滷味採自助式,除了豆干(20元/片)、海帶(15元/片)個數計價,泡菜、花生份數計價(20元/份),其餘滷料都是秤重,夾取的時候千萬別失心瘋因為不便宜阿。
*泡菜(20元/份) 內用給一個小盤子,吃多少夾多少只要別浪費就好。泡菜偏酸白菜醃漬發酵方式,一入口可直接感受到天然的酸香直衝味蕾,相當清爽。或許因為醃漬不久才能保持清脆口感但高麗菜生味相對較顯著,也因為風味簡單非台式泡菜的白醋酸砂糖甜,所以接受度也是見仁見智。
*滷料 ①當天大概12:30到很多滷料都賣完了,包含本來想試的豆干和海帶。 來之前已有耳聞滷料不便宜,所以非常客氣夾了一小塊豬舌與牛筋,但結帳時還是驚訝了一秒(190元)。 牛筋軟嫩入口即化,豬舌嫩中帶彈感,自然甘甜的底韻淡淡八角清香,非重口味派別相當耐吃。 ②為了不留下遺憾,隔日外帶了沒吃到的豆干、海帶和花生,畢竟滷功厲不厲害品嚐基本款品項就能略知一二,可惜蠻失望的⋯ 豆干Q彈有豆香,海帶軟卻不爛,但這兩款味道單一缺乏鹹香無太大特色,必須靠蘸料才能提升層次。反倒花生滷的相當入味,但口感不平均部分脆口部分鬆軟。
*乾麵(50元/碗) 看似簡單的乾麵,卻相當有深度。麵條川燙時間拿捏的很剛好,如此細的麵還能保有一定的勁道,搭配店家調製的獨門醬汁,帶淡淡的醬油鹹香與豬油香,多咀嚼幾下伴隨而來的是麵香,是碗簡單卻會讓人情不自禁一直吃的麵。 清湯是店家免費提供,可以嚐到大骨的鮮香,但偏鹹且油了點。
